PASTRY SPECIALTY CHEF, duties include but are not limited to creating menu items and specials, training, and maintaining the highest quality culinary team available. Must be familiar with and able to bake from scratch, the following: Macarons, Souffle, Baked Alaska, Red Rose Cake, Meringue Birch Twigs, Brandy Snap Cannoli, Lemon Curd and Raspberry Pielets, Sweet Cookie Tart Crust, Miguelito Baby Blue Cheesecake, Molasses Crumb Cakelets, Guinness Molasses Dough, Pita Bread, Strawberry Danish, Abuelita Doughnuts, Crepes with Bananas and Cream, Cabin Smores, Chefs Bread Pudding, Deconstructed Apple Pie, Deconstructed Lavender Blueberry Pie, Mauna Loa Lava Cake. Able to work flexible hours, including evenings and weekends.
