Description
Strategic Responsibility:
The Chef is responsible for overseeing the culinary management of David C Cooks cafeteria. This position combines their food expertise with the ministry's business processes, functions, and tenants to meet or exceed customer needs and wants. The Chef is in charge of overseeing all functions of the cafeteria including but not limited to designing, purchasing supplies for, preparing, delivering and serving bulk meal orders to the David C Cook staff based on their menu selection and event type. This position is responsible for studying recipes, setting up menus, and preparing high-quality dishes for David C Cook events. This position is full-time working 32 hours per week.
Job Description:
Oversee all operations of headquarters cafeteria.
Implement and maintain Culinary Excellence Standards.
Manage day-to-day Kitchen operations.
Execution of Daily Food Service, Quality, Technique, Portion, Presentation and Food Cost Control.
Consulting with David C Cook leadership to approve menus, supplier agreements, and budget allowances.
Support management with Catering Proposals, Menu Pricing and Menu Innovation.
Track food costs while Managing Vendors to provide Standard Cost-efficient Products.
Estimate Food Consumption and Requisition of Food Purchase.
Responsible for all the kitchen purchasing, including weekly grocery shopping for the following week.
Preparing and storing food safety before and during events.
Setting up all tables and food service areas with chairs, linens and dishes.
Serving food to guests at events.
Cleaning up and tearing down the dining area by removing all tableware, linens, garbage and furniture.
Creating menus according to a clients preferences and dietary needs.
Ensure that appropriate sanitation, maintenance and safety standards are followed.
Ordering any necessary supplies for events.
Determining costs based on event budget.
Perform other job-related duties as assigned.
Qualifications
Position Requirements:
Formal Education: AssociatesDegree in Culinary Arts required. Culinary school diploma preferred. Will accept relevant work experience in lieu of a degree.
Experience: 2-3 years proven work experience as a Chef. Hospitality-related kitchen or front-of-the-house experience preferred. Experience leading a small team of kitchen staff preferred.
Specialized Knowledge/Certification: Valid drivers license. Knowledge of culinary techniques preferred. Some understanding of restaurant/cafeteria business management. Ability to remain calm and undertake various tasks. Excellent time management abilities. Up-to-date knowledge of cooking techniques and recipes. Familiarity with sanitation regulations.
Equipment Knowledge: Hands-on experience with various kitchen equipment (e.g. grills, ovens, stove tops, etc.).
Working Conditions:
  1. Comfortable working conditions, handling light weight, standing and walking.

  4. Business hours Monday - Thursday (6:00am - 3:00pm) for breakfast and lunchare typical but must have a willingness and flexibility to work during evenings and weekends if/when necessary when we have events.
