Seeking a Chef de Cuisine for a NEW restaurant in Washington, DC!! Opening Soon. There are locations in West Village NYC, Upper West Side NYC, San Francisco, Fairfax Virginia. Will work directly with the Culinary Director to open the restaurant, create weekly menu specials, recipes, cost, ordering. Upon opening they will be open 6 days a week for dinner, adding a 7th day and Brunch on the weekends once the restaurant is fully operating.
Requirements:
- 8 years of experience in the kitchen at French, Italian, Spanish, Mediterranean establishments
- Knowledge and proven track record of French cuisine, all basics such as braised meat, stocks, beurre blanc
- Will assist with expo and plating
- Experience managing a team of 15 and 200 covers per day
- Experience with fresh, local produce
- Good temper, excited about the project, in for the adventure
- Will be #1 Chef on-site when Culinary Director is not in DC, working directly with GM for successful operation
- $90k benefits, salary increase after 3 months of success with company ($70k salary for someone wanting to relocate to DC with apartment provided)
