This role is also responsible for the supervision of dining services staff. The Executive Chef is responsible for the preparation of food and ensuring quality dining services at all times. Qualifications:
T hree years recent experience in commercial dining services production required
Working knowledge of applicable federal, state and local regulations
Ability to instruct, direct and lead dining team
Must relate well to team members, residents and visitors
Expectations:
Supervises all aspects of food production including menu planning and food preparation to ensure customer satisfaction
Responsible for the completion of all required record keeping related to these processes
Ensures proper food handling procedures when preparing, holding, serving and storing of raw and cooked food items
Advise the Director of Culinary Services in the preparation of the department schedules within budgetary guidelines, providing adequate staff to assure quality-dining services
Assist the Director and Assistant Director of Culinary services with agenda items with regards to staff meetings for purposes of planning, coordinating and implementing policies and procedures regarding quality resident dining services
Assists in the daily operation of dining services department
Responsible for the overall production/quality standards of community meals
Creates daily menu specials
Ensures compliance with recipes during food preparation; maintains recipe files
Responsible for catering and special functions food production
Assist with the inventory control system of necessary food and food supply items
Assists with the routine maintenance of dining services equipment
Responsible for safety of kitchen work area
Assist with participates in the dining services Quality Assurance Program
Maintains customer service with residents
Assures comment cards are accessible to residents and guests at all meals
Collects customer satisfaction cards, addresses questions/concerns and reviews comments with the Director of Dining Services
Assists Director of Dining Services with the maintenance of dining services policies, procedures, objectives, and standards of practice
Assures maintenance of a clean and sanitary work area in compliance with established guidelines though daily inspections of work areas, dining room and pantry area
