Gina's on Congress is Hiring a Sous Chef Near Austin, TX

ABOUT GINA S ON CONGRESS

Paris meets Rome at Gina's on Congress with fresh takes on classic bistro cuisine including pasta, tartare, carpaccio, mussels and frites, and signature cuts of meat like a veal chop (pictured above). Dishes will be relatable with an emphasis on quality, simplicity, elevated depth of flavors, and presentation. Boutique estate wines, classic cocktails, and espresso drinks will keep the bar bustling.

Built in the late 1800 s, 314 Congress has been reinvented over the past century-plus as a jail, brothel, office, saloon, and restaurant (most recently La Traviata). The space has unique charm with original brick walls and a large wooden bar with decades of history. Situated in the heart of downtown, Gina s is mere blocks from numerous hotels, offices, theaters, and venues making it a great stop for lunch, after-work happy hour, pre/post show drinks and dinner.

Gina is short for Regina in Italian and translates as Queen. Famed Italian actress, photographer, and international icon Gina Lollobrigida popularized the nickname after rocketing to fame as a queen of the Italian big screen in the 1950's and 60's. At one point dubbed The Most Beautiful Woman in the World, Lollobrigida became an inspiration to the rich and famous. Gina s on Congress will be a place where downtown locals can go to feel like royalty and visitors can become inspired.

This is the fourth concept from Lockley's Flavor Hospitality Group. His other established businesses consist of Rosedale neighborhood favorite Gusto Italian Kitchen Wine Bar, recently opened Gracia Mediterranean, and full-service catering company Flavor Co. Catering Events.

Gina s Executive Chef Jason Tallent has worked with several James Beard award-wining chefs in San Francisco and won numerous awards during his time at Globe, including Best Late-Night Dining from The San Francisco Chronicle. In Austin he has helmed the kitchen at Cipollina in the Clarksville neighborhood, and most recently opened Gr cia Mediterranean with Lockley / Flavor Hospitality Group. Additionally, longtime service industry veteran Ethan Murphy will be moving from Gusto Italian Kitchen Wine Bar to be front-of-house manager at Gina s.

ABOUT THE SOUS CHEF POSITION

We are looking for a leader to assist in growing this new concept and style. This individual is energetic, organized and passionate. We are creating a collaborative team-oriented environment for everyone to grow and excel.

As the Sous Chef you will be responsible for planning, managing and executing food preparation under the guidance of the Executive Chef. You will also assist the Executive Chef with planning menus, training, hiring, budgeting and inventory maintenance. This position utilizes the skills to move into a high-performance role.

You will be a part of a growing and evolving culinary program. We welcome innovative, passionate and food opinionated individuals to join our team.

EXPERIENCE & QUALIFICATIONS

  • Minimum 1 years in a line cook role at a full service restaurant
  • Current Food Manager certification registered with the City of Austin Environmental Health Services Department (can be obtained after hiring)
  • Open availability and flexible scheduling, including ability to work nights and weekends
  • Experience working with French and Italian cuisine preferred, but not required
  • Working ability to communicate in both English and Spanish preferred
  • Ability to master all kitchen stations
  • Personal responsibility mentality with a hands-on mindset
  • Demonstrated knowledge of operations, including equipment operation and maintenance, setting par levels for prep and ordering, and training staff on proper technique
  • Ability to maintain a positive attitude under pressure
  • Dedicated work ethic and ability to balance focusing on the tasks of the day while also working towards long term goals
  • Strong leadership & organizational skills, including ability to inspire, motivate, and help train and develop team members skill sets
  • Excellent interpersonal communication skills across multiple channels - with guests, employees, Executive Chef, management, and ownership

DUTIES & RESPONSIBILITIES

  • Uphold menu standards, food quality, and a very clean and organized kitchen
  • Assisting the Executive Chef in all facets of managing food production and execution
  • Assist with training and developing kitchen staff
  • Evaluating and maintain quality of mise en place and stations
  • Accurately preparing all required reports, schedules, and other admin paperwork
  • Working with other chefs on the seasonally changing menu.
  • Working with other kitchen and FOH management to achieve company objectives in sales, service, quality, and atmosphere
  • Understanding and implementing all company policies, procedures, standards, specifications, guidelines, and training programs
  • Be an advocate of our company culture'
  • Working the line multiple shifts per week
