**Sous Chef | St. Neo's Brasserie**

at The Drayton Hotel Savannah St. Neo's Brasserie, located at the The Drayton Hotel, is a seafood restaurant and raw bar with a southern accent led by Executive Chef. The team at St. Neo's Brasserie oversees the restaurant, Rooftop, Coffee Bar, and Downstairs Cocktail Lounge at The Drayton Hotel.

The Drayton Hotel is inspired by Savannahs Historic District neighborhood, people and culture. We treat our team like family, and create a place where guests can experience Savannah's Historic District traditions and entertainment.

**The Role**

As Sous Chef, you will work with Executive Chef on menu development, menu training, purchasing, inventory, and culinary and labor cost management for all culinary operations.

**Responsibilities**

*Culinary:* You will work with the Executive Chef to develop menus, manage daily activities of prep cooks, line cooks, and culinary team to ensure all food served is monitored for recipe accuracy, taste and visual appeal while promoting our high-service culture through actions and positive attitude.

*Organizational and Budgeting:* Lead a safe, sanitary, organized kitchen. Create, manage, and continuously improve financial performance, inventories, food costs, labor costs, food production standards and resources to balance team and guest experiences.

*Learning and Development:* Coaches and trains culinary team on safety and sanitation standards, menus and presentation. Aligns culinary team to hotel values and culture. Implements programs to recognize and reward team and personal and professional growth.

**About you...**

* 3 years of p rior sous chef or chef de cuisine experience in upscale dining environment required.

* Exceptional culinary skills and palate.

* Have a warm, engaging personality.

* Appropriate food safety certifications or ability to obtain local government required licenses, certificates, or permits.

* Hands-on attitude with an attention to detail.

* Excellent organization, problem solving, and project management skills.

* Think and act in high-pressure situations.

* Communicates well with peers and guests.

* Able to meet physical demands.
