Chef De Cuisine

JOB DESCRIPTION:

As the chef de cuisine this role is responsible for managing daily operations, overseeing the kitchen staff, fostering relationships with suppliers, and planning the daily menu. The chef de cuisine must possess a specific level of creativity in order to execute the restaurant's concepts, menus, and recipes. The chef de cuisine's primary role is to ensure that all food meets the highest quality standards

REPORTS TO:

Executive Chef

RESPONSIBILITIES:

  • Maintain relationships with suppliers
  • Manage day-to-day kitchen operations, including sanitation requirements and maintenance of kitchen equipment
  • Oversee food preparation by kitchen staff
  • Assist with the hiring and management of kitchen staff
  • Plan menus with the sous chef and pastry chef
  • Execute the menu by overseeing a chef de partie and working any station on the line

REQUIREMENTS

  • Degree in Culinary or relevant field
  • Minimum 3 years of proven work experience in the high-end hospitality field
  • Spanish speaking is required
  • Must be proficient in Excel spreadsheets, Craftable which is our software to place food orders and manage cost, and ability to manage budget and understand a P&L, strong analytical skills, both fast and accurate in handling financial data.
PERSONAL APPEARANCE:
  • Must abide by the brand standards pertaining to uniform requirements
  • All employees must maintain good personal hygiene. Fingernails must be cut and clean. Personal appearance must be suitable for work at all times. Must be clean-‐shaven at all times. Slip resistant black shoes.
  • Maintain personal health and sanitation standards (wash hands when using the restroom)
