Salary/Rate - Negotaible.
The Cantina Manager is responsible for managing, driving and helping oversee all FOH operations
of La Esquina restaurant located within Moynihan Train Station. This person is the point of contact
for the restaurant and communicates all information relating to staff and operations to the Director
of Operations and Partners of La Esquina.
● Monitor the operation to ensure the company standards are maintained.
● Follow guidelines with health, labor, safety, sanitation and alcohol awareness.
● Responsible for daily cash & tip reconciliation.
● Review the daily sales, comps, and complaints.
● Prepare and manage the staff schedules according to Plan. Forecast changes according to
sales.
● Set up a positive, upbeat tone for the employees emphasizing teamwork and supporting one
another.
● Prepare and manage the staff training (service, food and alcohol).
● Forecast weekly payroll against yearly plan.
● Log daily tips and print tips report to match.
● Organize weekly payroll paperwork including: staff hours, 10hr spread, 1099 employees,
confirm salaried employees and days worked, enter and update pay rates, training hours, OT
hours.
● Balance end of week payroll totals with POS.
● Submit the payroll to HR. Send a copy to the bookkeeper.
● Complete nightly flash reports
● Make sure all employee side work is complete before administering comps and check outs.
● Organize mail for the corporate office and keep for DOO/Bookkeeper.
● Manage the maintenance, repair, permits and licenses checklist.
● Coordinate inspections, repairs and maintains for all equipment, electrical, plumbing
mechanical, hood cleaning and other related systems.
● Inspects all maintenance work for completeness.
● Review monthly financial reports on sales and expenses created by the bookkeeper.
● Create Daily notes in Toast (organizes the team’s notes).
● Update and maintain all menus for the venue on a weekly basis.
● Manage staff to ensure BOH staff follows guidelines with health, labor, safety, sanitation and
alcohol awareness with operations manager and purchasing manager.
● Order and receive beverage products through weekly orders. Coordinate correct quantities.
● Oversee food/dry goods/packaging inventories and coordinate with the Purchasing
Manager.
● Manage vendor booking system to ensure deliveries can enter Moynihan Station.
● Weekly inventory (Glassware, breakage reports etc)
● Ensure La Esquina is operating within the guidelines of the landlord and the general
operational functions of the food court.
● Can jump into any position when necessary and must be someone who can make drinks,
cook, serve, or host
● Provide assistance to the DOO if needed/asked
