Key Responsibilities:

Vosges Haut-Chocolat is a pioneering luxury chocolate brand rooted in innovative culinary artistry and exotic ingredient exploration. Our dedication to quality, craftsmanship, and pushing the boundaries of flavor has earned us a revered spot in the hearts of chocolate aficionados worldwide. We are seeking a highly skilled and passionate hands-on Pastry Chef/Chocolate Technologist to join our team.

Principle Responsibilities:

- Test and document recipes to ensure product consistency in production.

- Troubleshoot and coach the R&D team on confectionary procedures.

- Lead the R&D team in the development of new chocolate products, from conceptualization to commercialization, ensuring they align with our brand's vision and quality standards.

- Utilize expertise in water activity and pH level knowledge to ensure all products are safe, shelf-stable, and maintain their desired sensory attributes throughout their shelf life.

- Implement and uphold Good Manufacturing Practices (GMP) within the R&D department to ensure all new products are produced in a safe, clean, and efficient environment.

- Collaborate closely with the production, quality assurance, and marketing teams to ensure seamless product development and launch processes.

- Stay abreast of the latest trends and advancements in chocolate confectionery technology and food science, incorporating innovative techniques and ingredients into product development.

- Foster a culture of creativity, experimentation, and continuous improvement within the R&D team.

Qualifications:

- Bachelor’s degree in food science, Pastry and Baking, or a related field, with a strong preference for candidates with a specialization in Chocolate Confectionery Technology.

Qualifications continued:

- Minimum of 5 years of experience in a Pastry/Chocolate/Food Science or R&D role within the confectionery industry. Solid working knowledge of ganache, toffee, marshmallow, caramels and their associated applications.

-Comprehensive understanding of food science principles, including water activity, pH balance, and Good Manufacturing Processes (GMP).

- Experience creating and managing research and development timelines and templates.

- Exceptional problem-solving skills and the ability to work creatively under pressure.

- Strong leadership abilities, with experience managing a team in a collaborative and dynamic environment.

- Excellent communication and project management skills, with the capability to lead projects from ideation to launch.

Helpful:

· Fluent Spanish

· Experience with NutraCoster, Flavor Studio, or Genesis.

· Experience with the Trustwell/FoodLogIQ platform

· Experience working in an SQF Facility

· Experience with ProChoc or other ganache balancing program.
