Job Overview :

The Mission Inn Hotel and Spa is a AAA Four Diamond hotel destination in Riverside, CA, and is seeking a highly experienced and motivated Chef de Cuisine to join our team. The Chef de Cuisine reports to the Executive Chef and is responsible for the daily operations of the Kitchen. The culinary team is seeking a professional, hardworking and organized individual with an energetic spirit. Candidates must possess a genuine passion to motivate, lead and develop others. Duties and Responsibilities:

  • Consistently offer professional, friendly and proactive guest service while supporting fellow Colleagues.
  • Oversee Culinary Operations for Mission Inn.
  • Oversee Lead and Support Culinary Staff.
  • Conduct daily shift meetings.
  • Manage inventories, pricing, cost controls, requisitioning and the issuing of supplies and equipment for food production.
  • Cost menus accurately
  • Ensure all Culinary associate are aware of standards and expectations.
  • Maintain cleanliness and proper rotation of product.
  • Balance operational, administrative and associate needs.
  • Ensure proper staffing and scheduling in accordance to Labor guidelines.
  • Ensure the cleanliness and maintenance of all work areas, utensils, and equipment.
  • Follow kitchen policies, procedures and service standards.
  • Follow all safety and sanitation policies when handling food
  • Other duties as assigned.

Qualifications and Requirements:

  • Previous leadership experience in the Culinary field required, minimum of 5 years of experience.
  • Diploma/Certification in a Culinary discipline preferred
  • Working knowledge of various computer software programs (MS Office)
  • Strong interpersonal and problem solving abilities.
  • Highly responsible & reliable.
  • Ability to lead a team of culinary professionals
  • Ability to coach, mentor and set standards.
  • Ability to work well under pressure in a fast paced environment
  • Ability to work cohesively as part of a team
  • Ability to focus attention on guest needs, remaining calm and courteous at all time.
  • Must have a Valid Certified Food Handlers Card.
  • May be required to work nights, weekends, and/or holidays.
