About the position...

The Executive Chef leads the culinary team in creating and producing innovative and evolving menus for all of our in-house dining venues and events. This person sets the standards and oversees the daily operations of all dining outlets as well as member and private events held throughout the club. Oversight of the Kitchen includes staffing, menu planning, ordering, vendor monitoring, food productions, inventory, catering and budgeting.

• Manages all operating expenses, sets margins and manages against projections.
• Works with the General Manager to create innovative menus with current food costs and member/guest satisfaction in mind.
• Controls ordering, inventory levels, timing of orders, receiving, and invoice settling.
• Works with the Event Sales Manager, Clubhouse Operations Manager, and Head Golf Pro to coordinate food and beverage service for member and guest events.
• Works with Building Maintenance to maintain kitchen equipment.
• Ensures quality sanitation program is followed throughout the kitchen operation. Ensures proper monitoring of storage (including temperature setting) and rotation of food products to comply with Health Department regulations.
• Manages Kitchen staff including training, planning, assigning/directing work, evaluating performance, rewarding/disciplining employees; addressing complaints and resolving problems.
• Works with Human Resources to recruit Kitchen staff.
• Monitors business volume forecast and plans accordingly in areas of staffing, productivity, costs and other expenses.

Requirements

What we are looking for from you...

• Associates Degree (AA) or equivalent from a two year college or technical school in Culinary arts preferred.
• Minimum of five years’ progressive culinary experience required.
• Must be able to work a flexible schedule including evenings, holidays, weekends, and long hours, especially during the “busy season.”
• Culinary experience in both restaurant and banquet settings is strongly preferred.
• Must be willing and capable of keeping up with cooking trends and best practices.
• Proficiency in Microsoft Word and Excel required.
• Expertise in a variety of culinary skills as well as experience with restrictive diets, allergies, and nutrition.
• Effective communication and leadership skills required.
