Summary:
This position is responsible for providing meals for campers and staff during the summer camp season (mid-June through August) and for the sports academy that rents the property in the off season, preparing meals for special diets, ordering food and related supplies, and cleaning and organizing the kitchen. This individual must ensure that the food services operations run smoothly and are conducted in a safe and hygienic environment. A primary function of this – and every other role at Camp Arrow Wood – is to ensure that each member of our community, as well as our guests, receive the highest level of service.
This is a year-round position focused on the time Camp Arrow Wood has residents on site. At present, this is anticipated to be September through mid-March for sports academy and mid-June through August for the camp.
Chef Primary Responsibilities:
While not an exhaustive list, the following is intended to give candidates an idea of the types of tasks and responsibilities associated with this role.
· Support all aspects of food services for Camp Arrow Wood during camp and in the off season for the associated rental group(s).
· Develop well in advance – and in conjunction with CAW leadership – the weekly/monthly menu.
· Assist in food services budget planning and manage the food services budget in coordination with CAW leadership.
· Cook and prepare three meals per day for the population residing at camp (estimated from 70-125 individuals at any one time) and serve on time based on the agreed upon schedule.
· Maintain appropriate knowledge of and attention to food allergies and food-related diseases and the ingredients that may cause the allergy/disease. Employ best practice with regard to ensuring all individuals with food allergies and food-related diseases are protected.
· Be willing and prepared to meet the special food/dietary requirements of campers, staff, guests, etc. (e.g., vegetarian, dairy-free, gluten-free).
· Supervise and coordinate the kitchen/dining room staff.
· Follow Massachusetts Department of Public Health regulations pertaining safe food practices.
· Work with camp leadership and Department of Public Health inspectors to ensure regulatory compliance and licensure/permitting.
· Ensure the food preparation and service areas and equipment are clean, hygienic/sanitary, and orderly and maintained in accordance with health regulations at all times.
· Sort, organize, store, and distribute kitchen supplies and ingredients.
· Review kitchen inventory and the planned menu to determine what items are needed. Place food services orders in accordance with the budget.
· Review all orders as they are delivered to ensure completeness, accuracy, etc.
· Unload fresh supplies and organize the stockroom, as well as the refrigerator and freezer. Rotate stock as appropriate to minimize food spoilage/waste.
· Conduct comprehensive food/supply inventory on a period basis (e.g., end of camp, end of rental).
· Wash, clean, dry, and properly store the food preparation equipment, pots and pans, utensils, serving pieces, floors, and other kitchen tools and equipment, or areas.
· Dispose of trash and take to the dumpster behind the dining hall. Replace liners in trash cans.
· Ensure readily available camper food items/snacks and drinks are regularly restocked and that the surrounding area is clean (during camp only).
· Support post-rental and post-camp clean-up of the kitchen and dining hall – ensuring that perishable items are appropriately donated or disposed of and non-perishable items are stored appropriately.
· Maintains excellent customer service and positive demeanor towards campers, staff, guests, customers, co-workers, etc.
Qualifications:
· Prior experience as a chef/cook
· Validated knowledge of the basic principles of food preparation, various cooking methods, and food safety regulations such as food handling, sanitation, and storage
· Experience cooking and serving over 100 meals per sitting
· Current ServSafe, Allergen Awareness, and First Aid/CPR certifications
· Knowledge of generally accepted well-balanced nutrition guidelines
· Experience with meal planning and ordering
· Must be able to pass a background check
This role may have physical demands including, but not limited to, lifting and carrying heavy objects; standing for long periods; bending; working in extreme heat; pushing or pulling; walking; working with chemicals; and working in a loud/noisy environment. This role may also require uniforms and/or use of Personal Protective Equipment (PPE).
