JF Restaurants *by Michelin-Starred and Award-winning Chef John Fraser* is looking for an Executive Sous Chef to join or team.
**Essential Job** **Function**:
Responsible for managing/overseeing events, commissary and prep kitchen personnel, ensuring the quality preparation of all food items and all proper handling/storage of all food items in accordance with applicable standards. Coordinates the purchase of all food, menu development while maintaining food and labor costs. Certification in NYC Food Protection License required.
**Key Responsibilities**:
Food Cost
* Supervising production
* Ordering dry goods, produce, meat , and seafood on a daily basis
* Reviewing all waste logs prior to end of shift
Labor Cost
* Adjusting line staff schedules according to business demands
Menu Development
* Following SOPs for menu development
* Testing/Tasting protocol
* Standardizing recipes
* Communication
* Training (FOH&BOH)/Implementation
* Menu Descriptions
Staff Development & Training
* Training and supervising new line staff
Meeting Representation
* Daily manager meeting
* Daily F OH line up
* Daily BOH line up
* Weekly Outlet Chef meeting /B EO meetings as needed
Communicating maintenance issues with engineering department according to SOP
* Signing off on HACCP logs nightly at end of shift
* Implementing DOH standards
* Coverage of e ve nts, commissary, room service overnight as nee ded.
