Prep Cook Responsibilities and Duties

Reports to: ExecutiveChef

Summary/Objective 

Plan,prep, set up and provide quality service in all areas of food production formenu items and specials in accordance with departmental quality standards andrecipes. Maintain organization, cleanliness and sanitation of work areas andequipment.

EssentialFunctions

• Maintainand strictly abide by state sanitation/health regulations (where applicable)
• Maintaincomplete knowledge of correct maintenance and use of equipment; use equipmentand tools only as intended, properly and safely
• Maintaincomplete knowledge of and comply with all departmental policies and procedures
• Meetwith Chefs to review assignments, anticipated business levels, changes andother information pertinent to job performance
• Inspectthe cleanliness and organization of the line and work stations; rectify anydeficiencies. Maintain throughout theshift
• Organizeall the various prep items needed from different areas to ensure that all itemsare in place and ready for service
• Prepareall menu items following recipes and yield guides, according to departmentstandards
• Assistin monitoring inventory of prepared food items to keep waste down whilemanaging 86’s
• Minimizewaste and maintain controls to attain forecasted food cost
• Transportempty, dirty pots and pans to the pot wash station

Work Environment

• Whileperforming the duties of this job, the employee is regularly exposed to heatfrom the stoves and burners
• Thenoise level in the work environment is usually loud
• Whileperforming the duties of the job, the employee is regularly required to stand,use hands to handle, or feel objects, tools, or controls; reach with hands andarms; talk or hear; and taste or smell
• Theemployee frequently is required to walk

Physical Demands

While performing theduties of this job, the employee is regularly required to talk or listen. Theemployee is required to stand and walk.

PositionType/Expected Hours of Work

This is a full-timeposition. The employee is expected to work alternating schedules includingnights, weekends, and holidays.

Required Education, Experience,and Qualifications

• Be21 years of age or older.
• Beable to communicate and understand English and Spanish.
• Possessesexcellent basic math skills and can operate a Booking system.
• Attentionto detail.
• Greatverbal communication skills.
• Customer-oriented.
