Description

Position Summary: Bacchus Pub is seeking experienced candidate for position of Executive Chef. We are looking for an energetic and organized Chef who is seeking a great opportunity. Responsible for the daily operations of the kitchen, and provides professional leadership and direction to Sous Chef and kitchen personnel. The Chef will provide insight into the Company culture through established policies and procedures. This position is responsible for maintaining food quality while promoting consistency and excellence by using the established recipes and procedures. This manager will ensure that all recipes, food preparations, and presentations meet restaurant's specifications and commitment to quality. This manager will maintain a safe, orderly and sanitized kitchen and will demonstrate this by example, using proper food-handling techniques.

The Pub is located inside the Baxter Hotel- an iconic historic building yet not currently an actual Hotel. The Baxter is the general name for our expanding company that is growing our footprint in Bozeman Montana. The heart of our business is currently centered at The Bacchus Pub, located at the heart of Bozeman's downtown historic district, has been the social hub for dining and nightlife in Southwest Montana since its opening in 1929. The Baxter is centrally located amidst Bozeman's charming Main Street stores, boutiques, galleries, museums and diverse restaurants which include the renown Teds Montana Grill restaurant and Bacchus Pub located on the Baxter's lobby level. It is also in close proximity to Montana State University and the nationally acclaimed Museum of the Rockies. The Baxter building has an elegant two-story lobby and recently renovated grand ballroom provide the preeminent venue for weddings and other special events in the community. The Baxter is rich in the history of Bozeman and is listed on the National Register of Historic Places. The building will undergo another exciting renovation again growing the footprint to provide our team with even more opportunities for personal and professional growth.

Primary Duties:

  • Develop, cost, and execute menu items profitably
  • Interfacing with clients, stakeholders and partners
  • Maintain the kitchen facilities, equipment and cleanliness standards consistently
  • Maintain Health Inspection scores above 95
  • Staff Management including; hiring, scheduling, development and maintaining Company Culture
  • Schedule and staff culinary team for all catered events in coordination with Operations
  • Deliver catering menus to Sales and marketing team, including seasonal menu creations
  • Work closely with sales & event planners to understand BEO specifics and provide solutions for off-site events
  • Execute client menu tastings
  • Control labor and food costs to ensure events are executed efficiently and within budgets
  • Ensure food production is done according to all health department requirements (e.g. HAACP) and kitchen is kept operational and organized

Qualifications


Qualifications:

  • Strong quality and consistency orientation required
  • Computer proficiencies in Excel, Word, Outlook required
  • Ability to memorialize standards, best practices, recipes and SOPs
  • ServSafe® Certified
  • Strong knowledge of ingredients and cooking techniques
  • Analytical ability and proficiency in math; ability to calculate margins, monitor profitability, and manage inventory
  • Strong to excellent communication skills and willingness to work as part of a team
  • Ability to deliver information in a clear and respectable manner to fellow Team Members, customers, and vendors
  • Ability to meet customer service expectations and standards in all interactions with customers, vendors, and Team Members
  • Ability to follow directions and procedures; effective time management and organization skills
  • Must be flexible to work evenings & weekends, as needed
