CORPORATE EXECUTIVE CHEF - FOR PRODUCTION COMMISSARY OPERATIONS & RETAIL RESTAURANT LOCATIONS
SALARIED POSITION based on Experience
In this unique, hands-on role, the Corporate Executive Chef oversees the Company’s Commissary operations and restaurant locations. MAIN focus and preferred job experience relates to our commissary operations. Responsibilities include menu development, supervision of food preparation, training, ordering, inventory, menu coordination and management of a staff that supports commercial kitchens (3 separate locations) which produce for multiple wholesale food accounts, and fresh food vending operations. http://www.iceboxpantry.com. Responsibility will also include overview of two retail restaurants.
Responsibilities and Duties:
Responsible for financial performance and P&L of unit.
Assist in menu development of new product lines and recipes
Ability to create or improve upon systems to optimize daily production
Responsible for food preparation, food safety, daily inventory and ordering products from various vendors each week
Ensures the integrity of the food storage and preparation, cooking techniques and kitchen cleanliness
Assures that equipment and supplies is maintained and in good, clean condition
Responsible for daily production schedules and prep sheets; maintains pars and inventory levels
Supervises the kitchen staff regarding production, food safety, work safety and sanitation
Must lead by example (punctual, good listener, communicates effectively, friendly, hard worker)
Effectively coordinate the daily functions of the kitchen in order to meet customer and business needs
Maintain excellent vendor relations with multiple suppliers Works effectively with staff in all locations
Requirements and Experience:
Strong experience in food service/food prep in a leadership capacity; formal culinary training a plus
Strong experience working in commercial kitchens, managing large number of employees per shift, manage production for multiple units and clients.
Must possess strong organizational skills, excellent computer skills including excel, ability to follow and create systems, if needed, that improve efficiencies, flow, accountability, etc.
Must have strong training skills as they will be training and overseeing kitchen leaders and supporting staff in multiple locations.
Must be able to work a 5-day full time schedule, with flexibility in hours worked which may include weekends
Must be a strong reader, excellent communicator and comfortable with technology -
Must be extremely organized, professional, and an effective supervisor with a strong work ethic Ability to work with all levels of staff, varying levels of knowledge of English, be a strong team player and possess the willingness to jump in where needed
Physical Requirements:
Must be able to lift, carry and move up to 60 pounds of products, supplies and equipment Ability to perform repetitive tasks, smell and taste to determine integrity, freshness, and proper seasoning
Able to stand for long periods of time, make visual inspections.

Schedule:
Individual will manage their schedule and be held responsible for all tasks to be completed on a timely basis.

Work Location:
Headquartered in Hallandale, FL with oversight of locations in Miami-Dade, Orlando and Atlanta, GA. Position will require travel to these locations to ensure that operations are being run according to Company standards.
