The Role: Preparation of food items for service in a high-volume restaurant The Venue: This iconic House of Blues venue is located on the famous Las Vegas Strip inside the Mandalay Bay Resort and Casino. This venue has a full-service restaurant, music hall, and nightclub. It is a go-to spot for unparalled views of the strip What you’ll do: · Prepare food items according to standard recipes · Ensure portions are correct size and weight · Follow all recipe specifications · Ensure proper rotation of all food items, including the lifting/moving of all food bens weighting up to 150lbs. · Keep all work areas clean and spill free · Ensure floor is cleaned, mop spills and remove any food, trash, or other obstacles from floor · Inspect food for spoilage · Proper rotation of food items · Maintain equipment in prep area of kitchen · Maintain line of sight/atmosphere control by circulating through your work area during shift · Follow House of Blues safety and sanitation standards · Assist other employees as needed · Follow closing procedures and check out with manager on duty What you’ll need: · Knowledge of high volume kitchen operations · Large batch cooking · Kitchen sanitation knowledge · Able to consistently follow recipe standards · Skills in using a knife and heavy duty kitchen equipment Required: · Large batch cooking· Kitchen sanitation knowledge· Able to consistently follow recipe standards· Skills in using a knife and heavy duty kitchen equipment· Ability to organize and manage time Preferred: · Self-motivation–work with little Able to communicate in Spanish Physical Work Demands: · Ability to work in a very fast paced environment with considerable noise and interruptions. Must be able to change activity frequently. Physical activities include walking, talking, seeing, hearing, pushing, balancing, stooping, crouching, kneeling, handling. Fast paced environment Ability to walk and stand for long period of time. · Ability to lift and carry objects up to 35 pounds.
