JOB TITLE: Pastry Cook DEPARTMENT: Kitchen REPORTS TO: Executive Chef, Executive Sous Chef, Sous Chefs CLASSIFICATION: Full-time/Hourly SUMMARY: As a hotel pastry cook, you will play a crucial role in the culinary team by specializing in the creation of a wide array of pastries, desserts, and baked goods for hotel guests and events. Reporting directly to the head pastry chef or executive chef, your responsibilities will encompass the preparation, presentation, and delivery of high-quality pastry products while adhering to established standards and guidelines. Your passion for pastry arts, attention to detail, and ability to thrive in a fast-paced kitchen environment will contribute to the overall success of our culinary offerings. ESSENTIAL JOB FUNCTIONS:· Pastry Preparation: Execute the preparation of diverse pastry items, including cakes, tarts, pastries, bread, and plated desserts, ensuring adherence to recipes, portion sizes, and quality standards.· Menu Development: Collaborate with the head pastry chef or executive chef to contribute ideas and assist in the development and refinement of pastry menus, considering seasonal ingredients, culinary trends, and guest preferences.· Quality Assurance: Maintain a keen eye for detail to ensure that all pastry products meet or exceed the hotel's standards of quality, consistency, taste, and presentation.· Sanitation and Safety: Adhere strictly to food safety and sanitation protocols, including proper storage, handling, and disposal of ingredients, as well as cleanliness and organization of workstations and equipment.· Inventory Management: Monitor inventory levels of pastry ingredients and supplies, and assist in inventory ordering, stock rotation, and waste reduction efforts to minimize food costs and ensure optimal product availability.· Team Collaboration: Work closely with other members of the culinary team, including pastry cooks, line cooks, and sous chefs, to coordinate pastry production schedules, prioritize tasks, and maintain efficient kitchen operations.· Training and Development: Provide guidance, mentorship, and on-the-job training to junior pastry staff members, imparting knowledge of pastry techniques, procedures, and best practices to foster their professional growth and development.· Guest Satisfaction: Collaborate with front-of-house staff to accommodate special dietary requests and preferences from guests, ensuring that all pastry offerings are tailored to meet individual needs and exceed guest expectations.· Adaptability: Demonstrate flexibility and agility in responding to changing demands and priorities in a dynamic hospitality environment, adjusting production schedules and strategies as necessary to meet guest requirements and event schedules.· Continuous Improvement: Seek opportunities for innovation and improvement in pastry production processes, equipment utilization, and recipe development, striving for excellence in all aspects of pastry arts and culinary craftsmanship.· Perform other duties as assigned by members of the management team. REQUIREMENTS:· Experience: Minimum of 2-3 years of relevant experience as a pastry cook or baker in a hotel, resort, restaurant, or similar culinary setting, with a proven track record of producing high-quality pastry products.· Culinary Skills: Strong proficiency in pastry techniques, including baking, decorating, molding, shaping, and finishing, with a creative flair for flavor combinations, textures, and presentations.· Education: Formal culinary training or certification from an accredited culinary institute, culinary school, or apprenticeship program, with a focus on pastry arts and baking techniques preferred.· Knowledge: Comprehensive understanding of pastry ingredients, recipes, and production methods, as well as familiarity with food safety and sanitation regulations, HACCP principles, and allergen management protocols.· Communication: Excellent verbal and written communication skills, with the ability to effectively communicate with kitchen staff, management, and front-of-house team members to coordinate workflow, address concerns, and ensure guest satisfaction.· Teamwork: Proven ability to work collaboratively as part of a cohesive culinary team, demonstrating respect, professionalism, and a positive attitude in all interactions with colleagues and supervisors.· Adaptability: Flexible availability to work a varied schedule, including early mornings, evenings, weekends, and holidays, to accommodate the demands of hotel operations, banquet events, and guest service needs.· Physical Stamina: Physical endurance and dexterity to stand for extended periods, lift heavy objects, and perform repetitive tasks in a fast-paced kitchen environment, while maintaining composure under pressure.· Creativity: Innate passion for pastry arts and a keen interest in culinary innovation, with a willingness to experiment, explore new techniques, and push the boundaries of traditional pastry craftsmanship to delight and surprise guests.· Professionalism: Demonstrated commitment to professionalism, integrity, and excellence in all aspects of job performance, with a focus on delivering memorable culinary experiences and upholding the reputation of the hotel as a premier destination for dining and hospitality.· Completion of a valid food handler’s training certificate.
