Maverick Gaming™ is dedicated to creating the best possible gaming experiences for every kind of player and currently owns and operates a portfolio of 27 properties across Nevada, Washington and Colorado with a total of 1800 slot machines, 350 table games, 1020 hotel rooms and 30 restaurants.

The Executive Sushi Chef will be responsible for contributing to menu creation and managing and training the kitchen team members to deliver an excellent guest experience. Responsibilities include handling a wide range of raw fish and other ingredients, managing food stock and working with an attention to detail to fulfill all orders within quality standards.

How You'll Succeed

In this role you will:

• Develop menus and oversee food preparation, team member supervision, quality control, supplies inventory and vendor negotiations.

• Identify new culinary techniques and presentations while staying current on restaurant industry trends.

• Coordinate, hire, and train kitchen management and kitchen personnel.

• Inspect the quality of food and assist kitchen team members with food prep and recipe creation.

• Plan and take corrective actions to resolve issues in a timely manner.

• Safeguard excellent food quality and presentation to ensure that restaurant standards are kept and maintained. Ensure all food safety regulations are followed.

• Ensure that the kitchen and surrounding areas are sanitized and clean in accordance with company standards and health code regulations.

• Implement procurement strategies to minimize costs and ensure timely delivery. Oversee purchasing to stay within budget.

• Develop food preparation techniques and supplies ordering system that minimizes wastage.

• Assign kitchen team members with food prep, recipe creation, stations and work shifts for maximum productivity.

• Develop guidelines for hiring team members to maximize efficiency and minimize labor costs without compromising quality of food and customer service.

• Perform other related duties as assigned.

To be successful in this role, you should have previous Culinary experience and knowledge that includes:

• Previous experience with Japanese cuisineExperience with inventory and ordering systems. • Adept in food cost controls.

• Incredible food preparation abilities.

• Compute basic math calculations.

• Certified in a food safety awareness program (ServSafe Manager).

• Current WA State Health Food Handlers Card.

• Keep up with cooking trends and best practices.

• Budgeting skills to control costs.

• Deep knowledge of the food industry, recipes and trends.

• Performs job functions with attention to detail, speed and accuracy.

• Quality management - looks for ways to improve and promote quality and demonstrates accuracy and thoroughness.

• Ability to prioritize and organize work activities, uses time efficiently and develops realistic action plans.

• Ability to work under pressure.

• Incredible time management skills and the ability to handle multiple tasks at once.

• Resolve problems using good judgment, displays willingness to make decisions, exhibits sound and accurate judgment, and makes timely decisions.

• Identifies and resolves problems in a timely manner and gathers and analyzes information skillfully.

• Understands guest’s service needs.

• Ability to manage kitchen operations.

• Proficient with computers and computer programs, including Microsoft Word, Excel and Outlook.
