**Responsibilities:**

* Directly supervises 1-20 employees in lower-level positions.

* Maintain strict confidence regarding company-related matters.

* Meets attendance guidelines & adheres to regulatory company & departmental policies & procedures.

* Maintain company uniform & dress codes.

* Follow directions from Chef /or FSD regarding other related duties.

* Maintain strict following of recipes for all food production & products.

* Must have proficient knife skills.

* Able to work all classifications, stations & kitchen departments; other areas may be required.

* Able to provide own tools.

* Monitor all stations & maintain strict use of recipes for all food production & products.

* Observation on all food stations to eliminate waste & to have the best & freshest products possible.

* Train all employees to menu specifications, sanitation & food handling.

* Produces daily production sheets & records leftovers

* Counts accurate inventory of all items in all food storage areas.

* Produces menu items by timeline requirements.

* Maintains all HACCP standard operating procedures.

* Accurately plan & create all requisitions for ordering.

* Receives & examines food products & supplies to ensure quality & quantity to meet established standards, specifications & ensures proper storage & organization from all suppliers.

* Able to identify & fabricate all meats, raw or cooked for service or functions, as well as other products, but not limited to vegetables, fruits, starches, etc.

* Produces menu items by timeline requirements.

* Performs all knife skills & cooking methods on proteins, vegetables, starches & other ingredients according to recipe within the prescribed time frame to complete all service times for caf or functions contracts in an **accurate & rapid manner**.

* Maintain all prepared items are labeled with the following information; item inside the container, date item is prepped, use by date & initials of the person who prepped the item.

* Supervises/trains lower-level staff engaged in preparing, cooking, serving meats, carving, sauces, vegetables, soups, mise en place, technical skills, & other food products.

* Other duties as directed

**Qualifications:**

* Minimum of three (3) years of progressive culinary/kitchen management experience preferred

* Expert knowledge of food and catering trends with a focus on quality, production, sanitation, food cost controls, and presentation

* Fine dining restaurant, hotel, or country club culinary experience is highly desirable

* Experience with high-touch customer service environments

* Creativity and plate presentation skills a must

* High volume, complex foodservice operations experience highly desirable

* Must be experienced with computers: to include Microsoft Office (Word, Excel, and PowerPoint), Outlook, E-mail, and the Internet

* ServSafe certification required

* Must be able to successfully complete criminal background checks (State and Federal) and drug screenings

* Must be willing to participate in-patient/resident satisfaction programs/activities
