The Prep Cook performs a variety of standard tasks like retrieving items from the pantry or fridge and portioning out ingredients. The Prep Cook assists in preparing nutritious meals and served to all residents of Sayre Christian Village Healthcare Center. This position must follow nutritional guidelines and menus on a daily basis and abide by all health regulations and guidelines.

ESSENTIAL FUNCTIONS

• Handles food according to all government guidelines and is aware of minimum standards for a quality food service operation.
• Adheres to standard recipes and menus set forth by Sayre Christian Village.
• Adheres and maintains Sayre Christian Village and the Food and Nutrition policies and procedures.
• Interacts with employees and residents in a friendly and courteous manner.
• Comply with state and federal regulations and with HIPAA Security Policies and Procedures.
• Other duties as assigned.

DUTIES & RESPONSIBILITIES

• Completing all tasks, in order, on the prep list from the Head Cook or Manager.
• Labeling and stocking all ingredients on easily accessible shelves.
• Washing, chopping and sorting ingredients like fruits, vegetables and meats.
• Measuring quantities of seasonings and other cooking ingredients.
• Parboiling food, reducing sauces and starting first steps in various dishes.
• Responsible for reviewing the storeroom, walk-in fridge and freezer to check for low-stock items.
• Helps staff unload produce from delivery trucks and store them away.
• Often switches between multiple jobs to assist the kitchen staff as needed.
• Assists by washing dishes, bringing pots to boil, chopping vegetables, measuring portions and delivering produce to different stations for Cooks to add to their dishes.
• Assists by cleaning off kitchen surfaces, mopping floors and placing clean utensils and dishes back in the appropriate places.
• Records produce inventory and provides a list of supplies to management for them to order.
• Ability to follow directions and daily menus.

• Must obtain a thorough knowledge of cafeterias, kitchens, kitchen supplies, and freezers

EXPERIENCE & EDUCATION REQUIREMENTS

• 2 plus years of experience cooking for large and small groups.
• High School Diploma or GED\
• Certified in proper food handling, typically through a ServSafe Certification or Food Handlers Card

• Frequently communicates with employees, residents and Dietary Aide and Supervisors to ensure the nutritional guidelines are met.
• Occasionally lifts objects weight up to 50 pounds.

• Frequently stoops, kneels, or bends when stocking kitchen and food supplies.
• Frequently works in a well-lit, tempered room.
• Frequently works with kitchen appliances that can reach high temperatures.
