Day (United States of America)Position Summary: Responsible for the oversight of the food production area, taking a lead role in the daily meal preparation, management of the HACCP program and assisting the Chef with planning menus and establishing recipes.

Job Description:

Essential Duties & Responsibilities including but not limited to:

  • Establishes work assignments and oversees work of the production staff. Reviews menus and recipes with Chef ensuring that all necessary items are in stock.
  • Directs daily meal preparation following standardized recipes and procedures. 
  • Ensures that all necessary items are pulled. 
  • Ensures that meats are cooked off in advance.
  • Establishes order of items to be cooked. 
  • Prepares meals and ensures that all schedules are met.
  • Follows standardized recipes and uses a variety of kitchen equipment such as mixers, blenders, knives and slicers.
  • Washes, peels, chops and seasons vegetables. 
  • Slices and portions meats, cheese, fish and fowl. 
  • Measures and mixes ingredients. Fries, boils, bakes, roasts, steams, grills and seasons meats, fish and fowl.
  • Maintains food supply and notifies Chef of any shortages.
  • Labels, dates, covers and stores or disposes of a variety of food items.
  • Thaws and reheats and cools items following prescribed methods as per HACCP regulations. Maintains and supervises the completion of all temperature logs.
  • In the absence of the Chef writes menus for special functions, purchases meats, poultry and fish, inventories meat box twice a week and prepares schedule.
  • Wears gloves when handling ready to eat foods. Wears wizard glove when using knife or chopping.
  • Wears proper Lahey Clinic ID Badge Incorporates Lahey Clinic Guiding Principles and Mission Statement into daily activities.
  • Complies with all Lahey Clinic Policies.
  • Complies with behavioral expectations of the department and Lahey Clinic.
  • Maintains courteous and effective interactions with colleagues and patients.
  • Demonstrates an understanding of job description, performance expectations, and competency assessment.
  • Demonstrates a commitment toward meeting and exceeding the needs of our customers and consistently adheres to our Customer Service standards.
  • Participates in departmental and/or interdepartmental quality improvement activities.
  • Participates in and successfully completes Mandatory Education. Performs all other duties as needed or directed to meet the needs of the department.

Minimum Qualifications:

Education: Graduation from an accredited institution with background in food preparation and sanitation principles

Licensure, Certification, Registration: None

Skills, Knowledge & Abilities: Demonstrates the ability to be thoroughly trained to meet organizational standards.

Experience: Requires a minimum of three years of experience in institutional food preparation.
