What we offer:
The Executive Chef Role: The Executive Chef will oversee all aspects of the culinary operations in order to have high quality food and culinary experience for residents and guests, operations efficiency, labor, food control, and meet all local and state regulations. (S)he is responsible for the day-to-day operations of the culinary department to ensure financial performance as well as the planning, development, implementation, evaluation and improvement of all culinary standards. The Executive Chef is to ensure accurate, timely, and professional service to all resident, guest and employees.
Executive Chef Essential Functions/Duties:
Maintains ongoing compliance with appropriate local, state, federal, regulatory, and/or accrediting body standards. Ensures that the culinary department is prepared for inspection by regulatory agencies through regular auditing and maintenance of culinary policies and procedure.
Oversees departmental budgets, maintain monthly financials and provide explanation for variance while driving strong expenditure control.
Menu and recipe development for restaurant, bistro, enhanced care and memory care
Works collaboratively with the culinary department to emphasize the team's role in food quality and service to the guest, residents and employee's efforts.
Understand and be able to train staff on “Point of Sale “and utilize reports to maintain fiscal controls.
Responsibility of daily operations of high-volume kitchen, sanitation, food safety, residents and guests' satisfaction, labor control
Identify new culinary techniques, presentations, and industry trends and introduce them to the menus.
Lead, develop, and support staff through role modeling, company programs and various initiatives.
Provides ongoing support, direction, supervision and feedback regarding job performance of all staff.
Approach all encounters with residents, associates, and guests in a friendly, service-oriented manner.
Maintain high standards of personal appearance and grooming, as defined in the associate handbook.
Direct programs for training and development of the Culinary Supervisors
Oversee associate development and succession planning.
Institute whatever safety measures are necessary to comply with appropriate company, OSHA regulations and safety procedures.
Follows all emergency procedures and understands the safety practices.
Develop and implement procedures to improve operations.
Maintain regular attendance, as required by scheduling which will vary according to the needs of the property.
Pulls together resources to resolve resident and operational issues and impact results.
Is highly visible and interfaces with residents on a regular basis to obtain feedback on quality of product, service levels, and overall satisfaction.
Perform other duties as assigned, including filling in on all roles due to staff shortages.
Executive Chef Education/Experience/Licensure:
Bachelor’s degree in related area or Certified Culinary Diploma. Certified Executive Chef Credentials from American Culinary Federation
At least 8 years of Executive Chef Experience, with at least 2 years as an Executive Chef in senior living environment or resorts
Serve Safe Certified Manager
Strong knowledge of front of the house and back of the house operations including serving high quality meals and top service to the residents, guests, staff supervision, inventory, labor control and food safety
Maintain sanitation procedures and organization of work area adhering to all state, local and OSHA regulations.
Strong understanding of cost and labor systems that lead to controlling operations budget.
Ability to work under pressure and deal with stressful situations during busy periods.
Strong communication and leadership skills combined with advanced computer and math skills.
