Responsibilities include:
* Directing food preparation and service for all meal periods
* Recipe adherence and daily specials creation with an emphasis on Italian cuisine
* Training and supervising kitchen staff
* Compliance with food and facility safety/sanitary requirements
* Ensuring food quality and cost standards are consistently met
* Completing kitchen administrative and human resource duties
* Inventory, ordering, scheduling within cost control budget guidelines
* 5 years prior experience as Chef/Senior Sous Chef is required
* All Cost Controls relating to food production
* Extensive knowledge of Food Safety Programs/HACCP/ and Health Department compliance.
Prior experience as Head Chef, Sous Chef, Executive Chef, Chef de Cuisine, Kitchen Director, BOH Director is critical to success at this job.
