To provide leadership and oversight to the Beverage department. Trains, directs and supervises the service staff of the department to ensure all guest's needs are consistently met or exceeded, to create repeat business & increase profitability and efficiency to the department.

Create, organize, and implement all Beverage programming across the resort.

Ensuring that all inventory, pricing, and technique are consistent across the entire resort. Providing a reputation of prestigious product and service resulting in high satisfaction ratings, and increasing new and returning guests.

Maintaining budgetary guidelines by improving sales through service, up-selling, increasing return guests, keeping accurate records and inventories, and proper cash handling techniques that will minimize losses, and shortages resulting in decreasing costs, and increasing profitability.

ESSENTIAL FUNCTIONS:

  1. Interview, select, train, supervise, counsel and discipline beverage staff in the Lobby Lounge, Evolve, and Pool Bar outlets for the efficient operation of each outlet. Organize and conduct pre-shift meetings communicating pertinent information to the staff, such as house count and menu changes. Direct staff in their work assignment, and utilize on-going training techniques.
  2. Maintain and create relationship with vendors, to manage and build resort beverage portfolio beyond mandated inventory.
  3. Create and build all cocktail, spirit, beer, and wine lists across the resort, whilst monitoring the cost to ensure proper profitability/return. Including Lobby Lounge, Evolve Lounge, Pool Bar, Chophouse, Brissago, Golf, Ski, and Banquets, in addition special events as Igloo Experiences and Elevated Brunch.
  4. Interact positively with customers promoting hotel facilities and services. Resolve problems to the satisfaction of involved parties.
  5. Move throughout facility and beverage outlet areas to visually monitor and take action to ensure beverage quality and service standards are met. Verify temperature of fridges/wine, judge appearance and taste of products and check preparation methods to determine quality. Give guidance toward improvement and make necessary adjustments for consistency.

Maintain profitability of outlet. Control payroll, maintain par stock levels, calculating inventory, ordering and retrieving supplies.
