Description

Position Overview:

The Pastry Lead is responsible for executing all aspects of the pastry and viennoiserie program at the direction of the Executive Pastry Chef. They drive daily operations by leading the team on the floor and training/developing staff in collaboration with management. They help ensure tasks are properly allocated to and executed by the team. The Lead works to maintain high standards in their program by setting an example for teammates of efficiency and quality and promoting a positive work culture. Leads are responsible for actively troubleshooting and communicating with the Executive Pastry Chef and/or Manager on Duty around issues and challenges. 

Bread Alone Leads are responsible for helping their team run safely, smoothly, and efficiently while being ambassadors of our Purpose, Values and Culture. They work alongside their team to build good work habits, anticipate challenges, and troubleshoot. Leads hold themselves and teammates accountable to Bread Alone safety, culture, and employee conduct standards and they must proactively address any product, equipment, and staff issues in accordance with Bread Alone policy. 

Hours: This position will have a standard schedule with the expectation that they will be able to work across all shifts based on the needs of the business.This is a full-time position. We strive to make schedules as manageable as possible to encourage and allow work-life balance.

Compensation: Bread Alone is deeply committed to ethically balancing the demands of the business and paying a living wage to all those who contribute to our success. Pay for this position is $22.0 to $28.00 per hour.

Requirements

Duties and Responsibilities:

Duties, responsibilities and essential job functions include but are not limited to the following:

  • Master all skills and procedures at all stations in the pastry and viennoiserie program including: mixing, shaping, proofing and bake-off of all laminated products and all phases of cold case production
  • Learn baking techniques and mathematical skills necessary to make recipe adjustments required by variable weather and ingredient conditions
  • Learn the programming, operation, and troubleshooting of retarder/proofer system, ensuring that pastry doughs are proofed to specification
  • Learn the operation and troubleshooting of the Heuft oven system, including creating and modifying baking programs
  • Learn the operation and troubleshooting of all mixing equipment 
  • Learn the operation and troubleshooting and programming of automatic laminator
  • Assum select responsibilities as delegated when the Executive Pastry Chef is not available (e.g. troubleshooting, production planning, and coverage)
  • Maintain the appropriate use and upkeep of small wares such as baking molds, speed racks, baking trays, baking pans, etc
  • Develop a basic working knowledge of the Bread Alone production book, ensuring that production reports can be printed as needed
  • Assist in the training of team on process, techniques, and habits necessary to ensure consistency in performance
  • Learn and execute any other responsibilities or tasks the company identifies as necessary to this position in the future 

Job Requirements:

  • Able to stand for long periods of time while executing tasks quickly and accurately
  • Able to work in a physically demanding fast-paced environment
  • Able to tolerate exposure to high levels of heat and cold
  • Able to twist and bend repeatedly for long periods of time
  • Able to pull, push, move and lift to waist level
  • Able to carry awkward and shifting weights up to 50 pounds in a safe and controlled manner
  • Able to work with, handle, operate, and control hot equipment and products in a safe manner according to Bread Alone guidelines
  • Willing to follow all food safety policies and practices which include but are not limited to: Removing any visible or exposed piercings and body jewelry, personal accessories, false nails & refraining from makeup at work (ie. mascara or heavy foundation, lipstick)
  • Respect for and comfort with a diverse and inclusive workplace
  • Able and willing to use personal protective equipment (PPE) and assigned uniform as required per company policy
  • Able to gain proficiency in operating and instructing on the proper use of all systems(physical and technological) in use in your department
  • Willing to follow all safety guidelines set out by Bread Alone
  • Willing to take responsibility for your own and others safety by strictly enforcing all safety rules and regulations and taking steps to mitigate any unsafe conditions or practices enlisting the help of others as needed
  • Willing and available to work across all shifts and stations associated with pastry and viennoiserie
  • Willing and available to work overtime hours as needed (holidays, menu launch, high season, etc)
  • The Bakery is open 365 days a year and team members must be willing to work consistently throughout the year which includes holidays and weekends
