Rex at the Royal is hiring an Executive Chef!

Who are we? Rex at the Royal is a Southern-inspired, hospitality driven, restaurant, bar, and bottle shop with retail and event space. Our home is in Philly’s Royal Theater, whose legacy we aim to preserve and whose role as a community anchor, partner, and gathering spot we strive to emulate. We are a woman-owned hospitality group that includes 4 distinct restaurants. Each of them seeks to increase neighborhood vitality through a friendly presence and hub for gathering. Requirements

      • 3 years of experience in a similar role of Executive Chef in a high volume from-scratch kitchen
      • Extensive knowledge of the cooking techniques and legacy of the American South and the drive to continually research and develop new ideas to maintain the highest standards in hospitality 
      • Full weekend availability is required
      • Excellent organization, delegation, communication skills, and an ability to multitask
      • A proven track record of contemporary menu design, plating, and cost analysis
      • Must be able to lift 50 lbs on occasion
      • Current Philadelphia food manager certificate or Servsafe manager certificate is a plus
      • To facilitate easy communication with our diverse staff, the ability to converse freely in Spanish is a plus

Responsibilities

      • Maintain a clean, organized, safe kitchen in adherence to Health Department guidelines. Report all maintenance needs as soon as they arise
      • Process ordering and inventory using our preferred platforms
      • Perform expediting duties and act as a liaison between FOH and BOH departments as needed
      • Collaborate with the Culinary Director, Operations Director, and site leadership to make sure that budget requirements are met
      • Work with Culinary Director to inform new menus seasonally 
      • Collaborate with Private Dining Manager to fulfill all requirements for special events 
      • Be proactive in setting par levels and maintaining an appropriate level of inventory 
      • Schedule all kitchen staff to cover all necessary shifts. Post schedule well in advance and process BOH team member time off requests
      • Perform on time employee evaluations and deliver feedback using established HR protocols
      • Work with Culinary and HR Directors in establishing procedures to match company policy
      • Attend all manager, BEO, financial and director meetings
      • Fill in on prep or the line, as the need arises, to cover gaps in scheduling
