When Chef Ludo Lefebvre flew over The Rockies and threw on a pair of boots & his cowboy hat, he knew he'd found his second home. Denver, perhaps the greatest city of the West, is defined by possibility: a vast space for exploration & inspiration. Here, Chef Ludo chose to create a new kind of restaurant, one that is truly Mile-High, yet unapologetically French.

Chez Maggy is a traditional French brasserie, reinvented for the Queen City. It's a love-letter to Margaret, Ludo's mother-in-law who lived life to help others right here in Colorado. It's also a celebration of the land of Ludo's childhood: Burgundy, a place steeped in natural beauty and a deep connection to the Earth. Chez Maggy pays homage to Ludo's French roots while synthesizing his rich culinary traditions with the naturally abundant ingredients of the Mountain West. At Chez Maggy, we reimagine Continental Cuisine at the Continental Divide.

Beholden to nothing and open to spontaneity, Chef Ludo utilizes his training by the French Masters to create a menu that honors tradition and delights the senses. Deliciously French, but not a bit pretentious, the menu sings in a dining room that sets a Mile-High standard for elegance & ease. Chez Maggy is all that & a pair of boots. The limit to our creativity? Some might say it's a mile high.

Chez Maggy is looking for our next Chef de Cuisine. In this coveted position, the Chef de Cuisine will be responsible for creating memorable experiences for our guests through their leadership, creativity, and culinary skills.The Chef de Cuisine will build relationships in the heart of the house and the front of house to provide the best experience to colleagues and guests.

The Chef de Cuisine reports to the Executive Chef at the Thompson Denver as well as to the Regional Director of Restaurant Operations. The Chef de Cuisine works closely with the Chez Maggy Restaurant General Manager and Sous Chefs, as well as the Corporate Director of Culinary, to create and implement menu concepts.

Chez Maggy is situated inside The Thompson Denver, a part of the Hyatt collection. This is not your traditional "Hotel Restaurant".Chez Maggy fosters an environment where all work in a manner that is consistent with an independent owner/operator restaurant in partnership with the hotel.Organization, effective communication, and the ability to bring the vision of Chez Maggy to life will be your keys to success.

Responsibilities include:
  • Acting as senior leadership by developing and assuming key management responsibilities.
  • Mentoring sous chefs, supervisors and line cooks to help them grow in their career
  • Acting as the liason between heart of house and front of house, ensuring engagement and communication
  • Hands on supervision in the preparation and cooking of restaurant dishes
  • Attending daily Pre Meal Meetings to discuss and train the service team on menu items
  • Developing and implement creative menu items within the restaurant concept directly with our restaurant partner.
  • Planning, coordinate & implement special events and holiday functions.
  • Managing culinary colleagues through scheduling, payroll, training, coaching, evaluating and hiring.
  • Leading and coaching the team towards achieving exceptional guest service and colleague satisfaction results.
  • Monitor food production, ordering, cost, and quality and consistency on a daily basis.
  • Creating and maintaining accurate costing for all menu items
  • Creating and maintaining accurate training material including Food Builds and Recipe Builds
  • Participating in marketing events directly related to our restaurants.
  • Effective and timely communication with the Executive Chef, Regional Director of Restaurant Operations and other stakeholders
The budgeted range for this position is $75,000-85,000.Actual pay will be commensurate with experience.
