Responsible for assisting the Culinary management team in all aspects of prep, execution and service management in back of house operations and personnel, including but not limited to:

  • Ensure the proper line and stations set up and quality preparation and execution and menu items to spec.
  • Ensure proper preparation of all menu items especially those within your immediate department.
  • Responsible for New hire training and ongoing training of team members assigned to your immediate department or station.
  • Involvement in coaching, staff development and accountability standards
  • Must be aware of Proper handling and storage of all food and chemical items according to standards.
  • Assist in coordinating purchase of food products as needed.
  • Assist in the timely development and implementation of menu items and recipes.
  • Maintain a firm grasp & knowledge of food and labor cost to desired company goals without compromising standards
  • Assist in the process of organizing, training and enforcing kitchen policies, procedures and standards.
  • Assists in the execution of special events.

Essential Qualifications/Skills:

  • Possess strong work and people skills and the ability to lead by example, being a fair, consistent and approachable team member.

Three to five years’ experience in the culinary position of upscale multi-functional restaurant/hotel kitchens.

  • Ability to perform tasks within the position; prioritize, organize and in some cases delegate work assignments.
  • Ability to work all stations in the kitchen at a highly competent level for an upscale restaurant.
  • Ability to partner with the Chefs Team in strategic and tactical decisions, including menu planning, staffing, training, purchasing, etc.
  • Ability to effectively train new staff to be successful in their positions.
  • Ability to maximize food cost efficiency through proper preparation, storage and rotation for minimal waste.
  • Ability to schedule staff by business levels in an efficient and consistent manner.
  • Ability to perform assigned duties with attention to detail, speed, accuracy, follow-through, courtesy, cooperativeness and work with a minimum of supervision.
  • Ability to solve practical problems and deal with a variety of concrete variables in situations where only limited standardization exists.
  • Ability to work well under pressure and handle multiple tasks at once.
  • Punctuality and regular, reliable attendance
  • Interpersonal skills and the ability to work well with others and the public
  • Ability to satisfactorily communicate in English (speak, read, write) with guests, co-workers and management to their understanding.
  • Be flexible in hours /shifts
  • Be responsible for all aspects of the operation including guest satisfaction, human resources, financial performance, sales and revenue generation among others.
  • Assists the management in the development and implementation of restaurant wide strategies.
  • Ensure implementation of the standards and ethos with the objective of meeting or exceeding guest and organizational expectations.
  • Previous comparable position in a similar environment preferred
  • Culinary educational background a plus
