Chef de Cuisine - Upscale Hotel in San Diego

Position Overview:
A distinguished hotel in San Diego is seeking an experienced and talented Chef de Cuisine to join our culinary team. As a leading recruitment agency, we are dedicated to finding the perfect candidate who will bring exceptional culinary leadership to our esteemed establishment. This distinguished opportunity involves overseeing kitchen operations, ensuring adherence to high standards, and contributing to the culinary excellence that defines our hotel.

Responsibilities:

  • Lead and supervise the preparation and presentation of exquisite dishes, maintaining the highest culinary standards.
  • Conduct regular quality checks on line plating and ensure compliance with Standard Operating Procedures (SOPs).
  • Efficiently requisition and order necessary items from the food storeroom, non-food storeroom, and stewarding department.
  • Uphold stringent sanitation procedures, ensuring the kitchen is consistently clean, neat, and Health Department compliant.
  • Develop and maintain standard recipes, ensuring their consistent execution by the culinary team.
  • Train and mentor staff on menu items, ingredients, preparation methods, and culinary techniques.
  • Operate and oversee the maintenance of kitchen equipment, promptly addressing any malfunctions.
  • Review and optimize staffing levels to meet guest service expectations, operational needs, and financial objectives.
  • Conduct recruitment activities, including interviews, to build and sustain a skilled culinary team.
  • Provide effective coaching and counseling to associates, conducting performance evaluations.
  • Ensure the implementation of safety procedures, oversee adherence to loss prevention policies, and manage scheduling.
  • Foster a positive work environment, encouraging employee growth, development, and interdepartmental teamwork.

Qualifications:

  • 1-2 years of proven culinary leadership experience in a high-volume, full-service kitchen, preferably within a luxury hotel environment.
  • Demonstrated culinary skills with the ability to lead, develop, and motivate a skilled team.
  • Excellent written and verbal communication skills, coupled with strong organizational abilities.
  • Creativity and awareness of new culinary concepts and trends.
  • Computer literacy and attention to detail are essential.
  • Basic mathematical skills, including the ability to create and understand financial reports.
  • Experience in managing payroll and scheduling.
  • Flexibility to work a schedule that includes weekends and holidays.
  • College education and/or culinary degree preferred.
  • San Diego Food Handler/Serve Safe certified food manager required.
  • Physical ability to lift, push, pull, carry moderate weight, walk/stand for extended periods, and utilize culinary tools.

Compensation: $70,000 - $106,000 annually, depending on experience. The provided pay scale is a range, and actual compensation may vary based on qualifications and experience.
