Location: We are seeking an experienced Sous Chef - Cold Side - Indiana Convention Center for the Indiana Convention Center

The Indiana Convention Center is located in the heart of the 12th largest city in the U.S., Indianapolis, Indiana. The state capital, Indianapolis ranks in the top 25 most visited cities in the country, with 18 million annual visitors. Indianapolis International Airport accommodates 150 flights each day, carrying 7.4 million yearly passengers to and from the Circle City.

Now one of the largest convention centers in America, the Indiana Convention Center is connected by skywalks to more hotel rooms than any other city in the nation. Also linked to the center is a four-story urban shopping mall, surrounded by more than 200 restaurants and clubs, well-known sports venues, and a 10-block state park that features top museums, green space and a convenient canal walk. It's the reason Sports Illustrated's Peter King calls Indianapolis "the most walkable downtown in America."

Principal Function:

The principal function of the Sous Chef - Cold Side is to oversee the preparation and presentation of cold dishes within the Indiana Convention Center. The Sous Chef - Cold Side specializes in crafting an array of appetizers, salads, and cold platters with meticulous attention to detail. They manage the station, ensuring that each dish is not only prepared according to established standards but also presented attractively. This role involves maintaining inventory for the cold kitchen, collaborating with other kitchen staff for a seamless integration of cold and hot items, and demonstrating creativity in garnishing and plating. The Sous Chef - Cold Side expertise lies in their ability to balance organizational precision, culinary skill, and artistic flair, contributing significantly to the overall culinary excellence and visual appeal of the establishment's offerings

Essential Responsibilities:

Cold Food Preparation: Execute the preparation and presentation of cold dishes, salads, appetizers, and other items as per established standards.

Station Management: Ensuring all cold food items are prepared, plated, and presented accurately and attractively.

Inventory Control: Monitor and manage inventory for the garde station, including ingredients, garnishes, and condiments, to ensure freshness and prevent shortages.

Collaboration: Work collaboratively with other kitchen staff to coordinate the timely delivery and harmonious integration of cold dishes with hot items for a cohesive dining experience.

Qualifications / Skills:

Culinary Expertise: Possess a solid understanding of cold food preparation techniques, including but not limited to salads, charcuterie, and appetizers.

Organization Skills: Demonstrate excellent organizational abilities to manage multiple tasks, prioritize effectively, and maintain a well-ordered garde station.

Creativity: Showcase creativity in garnishing and presenting dishes, contributing to the visual appeal and overall dining experience.

Attention to Detail: Display meticulous attention to detail in the preparation and presentation of cold dishes, adhering to established quality standards and recipes.

Minimum of 3 years in a culinary leadership position with increasing levels of responsibility.

Other Requirements:

  • Able to work effectively and safely while subject to wet floors, temperature extremes and excessive noise; must be able to lift up to 50 pounds in weight; must be able to maneuver in an often tightly-quartered environment.

Hours may be extended or irregular to include nights, weekends and holidays.
