POSITION DESCRIPTION
Prepare meals for residents. Direct employees in the absence of the Food Service Supervisor.

ESSENTIAL DUTIES AND RESPONSIBILITIES
  1. Maintain high standards of sanitation by following HACCP principles in day-to-day operations.
  2. Ensure proper food temperature standards are followed, to include maintaining required temperature logs.
  3. Monitor refrigerators, freezers, food temperatures, pot and pan sink sanitizer daily.
  4. Prepare meals for residents, including therapeutic diets, mechanically altered, select menus, special functions, substitutions to ensure residents' needs are met.
  5. Communicate with food service aides about the count, special needs, substitutions, etc.
  6. Check in food deliveries, rotate stock, put away stock and inform leads/supervisor of inventory needs.
  7. Ensure all required product and produce are available for at least two days in advance of each meal. Notify Chef or ordering manager if any product is needed.
  8. Maintain recipes and update procedures and ingredients as needed.
  9. Assist with menu development.
  10. Monitor meal acceptance in the dining rooms.
  11. Attend meetings and serve on various employee committees as assigned.
  12. Practice good safety and sanitation habits (which includes following dress code, wearing proper hair coverings, proper use of gloves, back supports and other equipment), and participate as a Safety Team member.
  13. Perform other duties as assigned by supervisor, leads, cooks, or other Pilgrim Place supervisors.

Qualifications
  1. Minimum two years' experience in quantity cooking and preparation of special diets, preferably in healthcare.
  2. Ability to read and write instructions, and do arithmetic needed in dealing with quantity recipes.
  3. Ability and/or experience in directing employees.
  4. Ability to read and follow verbal and written instructions.
  5. Ability to maintain confidentiality in a variety of circumstances and to make sound judgments.
  6. Ability to report to work on time and complete the assigned work shift.
