Mirid III is Hiring a Chef de Cuisine Near Coraopolis, PA

We are a fine dining restaurant with farm-to-table menus. We use the finest quality ingredients available, and update our menus to reflect the flavors of each season. We support our local farmers and purveyors.

ROLE AND RESPONSIBILITIES:

  • Assure and maintain food quality standards including consistency and presentation alongside the Executive Chef and culinary team.
  • Ability to open and close the kitchen, including conducting inspired pre-shifts with your team, ensuring full preparation for service, breaking down and cleaning the entire kitchen, and completing final kitchen walk-throughs.
  • Oversee complete prep lists, banquet, catering, and writing standardized recipes.
  • Scheduling, teaches, training, coaching, and developing the culinary team and continues to improve kitchen efficiencies and team skillsets according to Hyeholde guidelines.
  • Ensures team members adhere to Hyeholde guidelines as stated in the team member training manual and employee handbook.
  • Promotes a cooperative work climate, maximizing productivity and morale.
  • Conducts regularly scheduled meetings to ensure lines of communication are open between management and team members.
  • Making people feel welcome and comfortable, treat every guest, employee, and vendor respectfully.
  • Must have a strong understanding of flavor profiles, and food and wine pairings.
  • Insight of current trends regarding artisanal food and spirits and vast knowledge of artisanal food, wine, cocktails, and craft beer is a strong plus.
  • Must follow HACCP guidelines, upholding company food safety, food handling, and sanitation requirements to ensure the health and safety of our guests and staff.
  • Perform and oversee inventory and ordering, identify and communicate needs to Executive Chef.
  • Accept direction and feedback from others, and provide the same to the team.

REQUIREMENTS:

  • Associates or Bachelor’s degree in culinary arts preferred, but not required. Minimum 3-5 years of related experience required, preferably in an upscale food and beverage operation with a proven track record of accomplishments.
  • Excellent written/digital and verbal interpersonal and communication skills.
  • Strong computer (Word, Excel, etc.)
  • Sets high standards by complying with all departmental rules, policies, and procedures.
  • Clean work habits, attention to detail, and thorough service standards are required.
  • Must be able to multitask in a high-volume environment while always appearing calm and collected.
  • Must possess a professional demeanor with the ability to interact with all types of team members.
  • Proven ability to lead a staff and positively influence employee behavior.
  • Experience navigating a P&L or otherwise experienced in financial a plus.
  • Ability to manage food and labor costs.
  • Prior experience with inventories, purchasing, and development.
  • Must be able to work flexible hours including nights, weekends, and holidays as required.
  • Must have the ability to stand and walk at a steady pace for periods of up to 8 hours or more.
  • Must have the ability to frequently lift and or move up to 50 pounds.
  • Must have completed and maintained certification in Serv-Safe.
  • This position requires proof of full vaccination against COVID-19 before the first date of employment, subject to applicable law unless a reasonable accommodation request is received and approved.
