Head Sushi Chef Responsibilities
Responsibilities:
· Communicating with restaurant manager about timing and food
· Making sure food comes out at the appropriate time
· Training and supervising sushi chefs
· Assisting and directing sushi chefs in meal preparation, creation, plating and delivery
· Handle phone calls/text from chefs running late or calling out. Having chefs fill in.
· Monitoring inventory and purchasing supplies and food from vendors
· Setting up work stations with all needed ingredients and equipment
· Check quality of ingredients
· Preparing ingredients to use in sushi (chopping and peeling vegetables, cutting/filleting fish etc.)
· Properly store food items at appropriate temperatures
· Rotate stock items as per established procedures FIFO (First in first out)
· Restock sushi bar for subsequent shifts
· Maintain a clean work area and sushi bar by sweeping and mopping as needed and ensuring the food prep area and sushi bar are cleaned and sanitized at the end shift
· Keeping walk in cooler, walk in freezer, storage room cleaned and organized
· Perform additional cleaning duties as requested
