**Position Highlights**

The Sous Chef assists the Executive Sous Chef and Executive Chef to develop and implement current menu items and training of staff on proper cooking techniques. This position supervises the daily operation of a large production area. The candidate for this position must have extensive knowledge of Food and Beverage preparation and presentation and excellent interpersonal skills. Incumbents in this classification are required to maintain a flexible work schedule in order to accommodate business activities. **Duties & Responsibilities**

* Assumes complete charge of kitchen on respective shifts: Supervises and maintains cooking and Health Department standards and techniques of line level employees. Works all stations as required.

* Provides leadership for subordinates and enforces proper procedures; assuming the accountability and the responsibilities of Supervisors in their absence.

* Participates in menu design and implementation

* Prepares orders for daily and up coming functions.

* Ensures proper usage and rotation of all food items.

* Checks freshness and quality of food and presentation.

* Maintains proper inventory levels.

* Oversees all food preparation and production in hot and cold kitchens. Expedites all event food orders.

* Participates in menu design and implementation.

* Additional duties as assigned my supervisor

* Ensures that all FoodPro production related functions are accomplished daily

* Is knowledgeable of current food trends and applies these to menu planning and food preparation

* Communicates and enforces all policy and procedure system change

**Knowledge, Skills and Abilities:**

* Knowledge of food and beverage preparation and presentation

* Knowledge of large production kitchen production equipment

* Knowledge of supervisory practices and principles

* Knowledge of sanitation and food quality standards

* Skills in basic math

* Ability to communicate effectively

**Physical Requirements:**

* Frequently reaches, lifts, shakes, stirs, pours, carries, and pushes

* Often withstand large workload under high heat

* Must be able to occasionally transport/move a maximum of 50 pounds

* Must be able to work varied shifts to include weekends, holidays, and a weekly schedule of 50 /- hours

**Minimum Qualifications**

* High school diploma with a minimum of 7 years of related work experience OR: equivalent combination of education and work experience required

**Preferred Qualifications**

* Have 2 years of experience as a supervisor
