Job Description 
The Culinary Director at Elevate Entertainment (EGG) serves as a pivotal leader at the venue level, embodying and promoting EEG's Food and Beverage Standard. In close collaboration with the VP of Food and Beverage, they ensure alignment with the overarching brand vision. This leader possesses the capacity to effectively direct and train both Back of House (BOH) managers and hourly cast members, fostering a culture where standards and skills are multiplied among cast members across multiple venues. They demonstrate autonomy and effectiveness while traveling, maintaining consistency in their leadership approach. Proficient in articulating their environment, they adeptly communicate needs to relevant departments and representatives, ensuring alignment with Food and Beverage Department goals and standards. They approach challenges as opportunities for growth, addressing core issues with a solution-oriented mindset. 
Responsibilities include but are not limited to: 
  • Uphold and evolve the standard of operation, demonstrating proficiency in speaking, operating, teaching, and adapting the standard as needed. 
  • Maintain open communication and alignment with the VP of Food & Beverage regarding needs, issues, and changes. 
  • Effectively troubleshoot and pivot in underperforming properties, identifying issues and providing solution-based approaches. 
  • Possess a multiplier mentality to maximize effectiveness during tight trip turnarounds, new acquisitions, and property openings. 
  • Maintain a task-oriented and organized approach before, during, and after property visits, ensuring accountability for previous issues and addressing them accordingly. 
  • Ensure consistency in kitchen operations and enforce Standard Operating Procedures (SOPs) for day-to-day activities. 
  • Demonstrate expertise in all menus across venues and possess technical skills to lead in the absence of a Kitchen Manager, including during new menu launches, training, and openings. 
  • Have knowledge of the business aspects of Food & Beverage, including food cost management, inventory, scheduling, and identifying efficiencies and revenue streams. 
  • Update and maintain training guides and communicate property needs and changes effectively. 
  • Familiarity with technology and kitchen operations programs such as Toast, Restaurant365, etc., and ability to utilize them efficiently. 
  • Participate in Research and Development (R&D) for new menu items, understanding the testing and documentation process. 
  • Conduct inspections of food facilities to ensure compliance with quality, sanitation, and safety standards. 
  • Maintain and enforce standard operating procedures, brand standards, company policies, specifications, programs, and initiatives across all revenue streams within the company. 
  • Performs other related duties as necessary or assigned.

  • Experience in food & beverage business development and operations.

  • Ability to understand and apply principles of all Food & Beverage metrics of measurement.

  • Strong team player with good interpersonal, oral and written communication skills.
  • Ability to function effectively and responsibly as a team member while working with multi-level supervision is required. 
  • Must willingly adjust schedule to meet project needs.
  • Ability to work in kitchen environment (standing/walking) for extended period’s base upon operation needs.
  • Ability to be a self-motivator working productively with minimal direct supervision.
  • Able to turn a situation of not knowing into a collaborative effort to learn.
  • Bilingual English/Spanish preferred. 
Education Experience: 
  • Bachelor's degree in culinary arts, hospitality, management or related field preferred. 
  • Minimum 5-7 years in multiple levels of dining executing, leading and teaching steps of service; both hotel and independent restaurant experience preferred. 
  • Must have an understanding of both high-level execution and the ability to take from those experiences and apply to a very high volume and fast paced operation.
  • Must have managed at the minimum a staff of 50 along with an operation that is $10 million
Physical Requirements:
  • Prolonged periods of standing, walking, climbing stairs 
  • Must be able to lift 50 pounds at times 
  • Must be able to travel at least 40% of the year
