As the Sous Chef for Gozzer Ranch you will be part of creating the Gozzer Ranch Experience. You may be asked to perform other tasks (outside of your key areas of responsibility) from time to time based on business needs. Your key areas of responsibility are outlined below:

Key Area #1: Leadership

  • Directly oversee employee performance by leading employees to being the best they can be
  • Conduct team meetings to discuss daily / weekly / monthly tasks and events
  • Prepare and communicate employee schedules to provide adequate coverage for all operational areas under your leadership. Ensure schedules are sent out timely so employees have time to prepare for their work schedule while also having the ability to plan and organize personal life needs
  • Develop and inspire a sense of urgency and motivated attitude amongst your team. Coach in a manner that brings the best out of people daily.
  • Provide equal and fair opportunities for all employees.
  • Clearly communicate property information to all employees.
  • Provide recognition on a regular basis to support employee retention.
  • Find solutions to any problems that arise concerning services.

Key Area #2: Member Experience and Vibe

  • Ensure that each member and member guest receive outstanding service in a friendly environment. This includes promptly and professionally greeting and acknowledging every member and member guest, maintaining outstanding service standards, and possessing solid product knowledge.
  • Communicate with membership to create an honest relationship where their service needs, food and beverage selections, and other dining-related services are known to you and your team.
  • Exceed member and member guest expectations.
  • Create 100% guest satisfaction by providing our Gozzer brand behavior and genuine hospitality.
  • Give personal attention and take personal responsibility for a member and member guest experience.
  • Promoting services and activities provided to Gozzer Ranch members.
  • Understanding member and member guest needs. Provide them with personalized solutions by suggesting activities and facilities provided by the Club.
  • Assisting in creating the service vibe with your team through service-minded experiences..

Key Area #3: Teamwork

  • Work intentionally to include all co-workers to include peers
  • Support Club wide services and events when possible
  • Create good working relationships with ALL Gozzer Employees
  • Maintain a courteous attitude toward ALL Gozzer Employees

Key Area #4: Daily Operations

  • Schedules working hours for kitchen employees, always taking into consideration the volume of expected business but careful to conserve labor cost.
  • Assigns in detail, specific duties to all employees under his/her supervision and instructs them in their work.
  • Works very closely with Stewarding, whose duty is to keep kitchen areas clean and orderly
  • Works very closely with the Senior Chefs in determining quality and quantity of ingredients used with a view of eliminating waste/spoilage, especially meats, fish, produce, etc.
  • Discusses with the Senior Chefs and recommends menu price adjustments when warranted. Determines prices of unlisted food items with guidance of the Senior Chefs.
  • Responsible for the quality of all food items prepared in the kitchen he/she supervises. Constantly checks food for taste, temperature and visual appeal. Ensures that all dishes are uniform and that established portion sizes are adhered to as per the specifications set out by the Senior Chefs.
  • Ensures that spoiled or damaged serving utensils are not in use, i.e., cracked/chipped china, glassware, and trains staff to do the same. Notifies any non-usable products to the Stewarding Supervisor to record as breakage and ensures that par levels of equipment are kept up to date
  • Prevent the use of contaminated products in any phase of food preparation and prevents employees who are ill or suffering from an infection from taking part in the preparation or handling of food.
  • Constantly on the alert for new products which may improve quality of food or lower food cost or both. Makes suggestions to the Senior Chefs concerning improvements which would tend to make more satisfied customers and/or increase volume of business or profit for the operation.
  • Checks maintenance of all equipment located in the area he/she supervises and makes every attempt to prevent the damage or loss of any property.
  • Adherence to budgeted headcounts for his/her outlet according to budget and business level (labor payroll directly correlates to revenue and budget)
  • Ensure high level of food safety management system including HACCP and all local food safety regulations.
  • Ensures that all safety, health, security and loss control policies and procedures and Government legislation are adhered to.
  • Any other duties as assigned.

Key Area #5: Recruiting

  • Work with Human Resources and the Culinary to organize and create a recruitment plan that accurately identifies needs.
  • Participate in activities to increase overall applicants to Gozzer Ranch
  • Attend college career days, local job fairs and keep an online presence for posting all needed openings
  • Be creative and innovative on ways to recruit and retain staff

Knowledge, Skill, and Abilities:

  • Prior food service management experience, preferred
  • Must have strong overall knowledge of food and beverage service
  • Must have knowledge and adherence to all state laws
  • Comply with Idaho State Health and Wellness regulations
  • Possess good computer knowledge
  • Positive attitude, professional demeanor, and exceptional communication and interpersonal skills to deliver service to members, guests, and team members
  • Knowledge of F&B operational requirements
  • Excellent written and verbal communications skills
  • Has complete knowledge and understanding of all cookery techniques and processes
  • Understands the needs and direction of resort / club setting F&B
  • Demonstrates flexibility and high energy levels
  • Interpersonal skills, communicator, team player and gives direction.
  • Ability to understand and carry-out verbal and written instructions independently
  • Ability to perform mathematical calculations correctly
  • Ability to work weekends, holidays, morning, and nights
  • Ability to work in all weather conditions and temperatures to include inside and outside areas
  • Ability to perform light physical tasks, exerting up to 25 lbs. of force on a frequent basis and up to 75 lbs. on an occasional basis independently or with help
  • Ability to perform such activities as grasping, lifting, reaching, crouching, walking, sitting, and carrying
