Principal Purpose of Job: The banquet captain is responsible for assisting the Banquet Manager with some front-of-house operational duties as well as working as a server and taking the guests through the key phase of their banquet experience. As a Devil’s Thumb Ranch banquet captain, you will be assuming the role of tour guide, communicator, decision-maker, entertainer, curator and rancher (at heart). The banquet captain is responsible for serving food and beverage to guests according to established sequence of service, overseeing team, and answering questions pertaining to food preparation.

Essential Duties and Responsibilities: 

  • Answering questions regarding preparation of food
  • Running food to tables, operating bars as needed
  • Handling cash & other forms of payment
  • Making proficient sales transactions when required (as an example - cash bar sales) - using a point-of-sale system
  • Properly checks I.D.s – for guests who appear to be under 30 years old
  • Demonstrating responsible alcohol service according to T.I.P.S certification standards
  • Demonstrating impeccable product knowledge
  • Properly reading items printed on Banquet Event Orders (BEOs) and executing event orders as prescribed
  • Assembling BEOs – understanding needs for event types (weddings/dinners/breakfast/lunch/corporate meeting, etc)
  • Satisfying any/all needs of the guests - regularly checking back with guests throughout their experience
  • Maintaining a clean & organized event space– including pre-bussing & table maintenance
  • Properly labeling, dating, covering and refrigerating prepped items
  • Properly labeling, covering, and keeping hot items hot
  • Performing opening, closing & side duties – setting up/breaking down station, etc.
  • Demonstrating knowledge of all table/station numbers
  • Directing guests to areas & restrooms
  • Effectively communicating with co-workers (team members, other captains, management, and kitchen teams)
  • Entertaining guests to create memorable experiences
  • Supporting and contributing to the mission and overall success of Devil’s Thumb Ranch by accomplishing performance objectives focused on guest experiences at events.
  • Being Ranch Ambassadors for the guests and know and be able to support Ranch-Wide knowledge to the guests.
  • Ensuring Ranch Mission is accomplished
  • Helps set up, refresh, and tear down event spaces
  • Other duties and responsibilities include seating, making drinks and being a team player.
  • Overseeing and handling upkeep and maintenance
  • Overseeing information of the POS System
  • Prepares daily deposits and ensures accuracy of all accounting for department events.
  • Manages daily tip distribution and opening/closing paperwork (including MOD report)
  • Works with Banquet Manager and Director of Guest Experiences to ensure execution and staffing of events, quality of service, and overall operation of events in the department.
  • Attends BEO meetings, Resume Meetings, PreCons, etc as necessary and takes notes, and communicates with team about any updates to BEOs and other event needs
  • Communicates inventory needs of items in the department with Banquet Manager for ordering
  • Flexible to support other outlets on property as needed/scheduled.

Physical Demands: 

  • Performing duties which require bending & reaching
  • Lifting & transporting up to 50-pound dining chairs, booster seats, high chairs, and food/drink – if applicable, emptying trash cans weighing up to 100 pounds 
  • Standing or walking, for up to 8 hours
  • Maintaining a well-groomed appearance (“having a plan”)
  • Following all uniform guidelines
  • Practicing all safety & sanitation standards
  • Recycling products, where possible

Education/Experience: 18 years of age; High School Diploma or GED, 2-3 years experience serving in a fast paced restaurant.

Special Skills/Equipment: Leadership, demonstrating a high level of organization, attention-to-detail and a sense-of-urgency. 

The position you are being hired for is an all inclusive “Food & Beverage Staff” position. Although you are signing this Banquet Captain job description, once validated, you may also be cross-trained in the Hecks or Ranch House Restaurant Server, Back Server and Bartender positions. These positions may become rotated responsibilities and used as volume and/or staffing needs dictate.
