You are inspired by seasonal product and excited by menus developed out of a farm-restaurant collaboration. You are mindful of what you do; of how you approach your work and how you value ingredients and suppliers. You are motivated to master every station and every position with a hands-on approach, learning the technical intricacies of culinary craftsmanship from whole animal butchery to an award-winning pasta-making program. You are motivated to learn and grow your culinary career.

POSITION REQUIREMENTS, KNOWLEDGE, AND ABILITIES

  • As a butcher/prep cook you are responsible for correctly completing the list of tasks assigned at the beginning of each shift. These tasks should be completed in a timely manner and should reflect the quality standards of the kitchen.

    • Prepare food following the standard procedures of the kitchen.
    • Follow all clock-in/clock-out rules, including those mandating meal breaks.
    • Clean and maintain all equipment and tools you use and keep your work area clean at all times
  • 2 years of meat and fish butchering experience
  • Food Handler's Certification
  • Must be able to comply with all health and safety standards

OTHER REQUIREMENTS:

  • Availability to work every day of the week including holidays
  • Ability to traverse all parts of the restaurant quickly and safely
  • Must be able to work in a stationary position for 7-8 hours (excluding breaks) at a time
  • Must be able to move 40 pounds at time
  • Must be able to comply with all health and safety standards
