Description
The Sous Chef assists in the direct supervision of culinary staff, food production, scheduling, training, maintaining quality standards and food cost control to create quality food products for all members and guests.
- Assists in managing all operating expenses, sets margins and manages against projections.
- Adheres to control procedures for cost and quality such as food production, inventories, and standardized recipes.
- Maintains and implements daily food prep lists.
- Trains and supervises staff in proper preparation of menu items and operation of equipment.
- Ensures all recipes are followed and prepared on a consistent basis.
- Ensures proper receiving, storage (including temperature setting) and rotation of food products to as to comply with health department regulations.
- Assigns duties to associates for efficient operation in the kitchen.
Requirements
- Certificate from college, technical school or accredited facility for 6-12 months related experience/training; or
- Equivalent combination of education and experience
- Regular and reliable attendance
- Must have reliable transportation
- Ability to work on weekends and holidays
