POSITION: DISTRICT HEAD CHEF

HIGH SCHOOL MAIN CAMPUS (CENTRAL KITCHEN)

7.0 hours per day: 6:30 AM – 1:30 PM Monday – Friday

$21.75 per hour

ABOUT OUR DISTRICT:

Holt Public Schools is located in the Lansing metropolitan region. It is primarily located in Ingham County with portions in Eaton County. We provide educational programs from Early Childhood through and beyond 12th grade including access to Early College programming and Career and Technical Education. Our current enrollment totals approximately 4,800 students. Our student body is approximately 45% persons of color with significant ethnic diversity and representation from historically marginalized groups. REQUIRED QUALIFICATIONS:

· Must have a culinary degree or equivalent culinary supervisory/management experience.

· Must have 1 to 3 years of culinary management experience.

· Experience in restaurants, hotels, corporate dining, education, military, health care, and/or related food service operations accepted. K-12 experience is appreciated but not mandatory.

· Hands-on chef experience.

· Comprehensive knowledge of food and catering trends with a focus on quality, production, sanitation, food cost controls and presentation.

· Computer skills and knowledge of MS Office programs including Excel.

  • Current Food Safety ServSafe Certification and an Allergen ServSafe Certification or must be able to renew, secure and complete within first 30 days of hire.
  • Respect for and genuine interest in students.
  • Ability to work with and mentor other employees.
  • Ability to take direction from all leadership.
  • Accuracy and timeliness in preparing daily reports and inventories.
  • Adaptable ability to problem-solve on how to move students quickly through line while maintaining accuracy with money and paperwork.
  • Familiar with computer point of service operation.

JOB RESPONSIBILITIES:

The Head Chef is responsible for supporting dining services and culinary operations for a K-12 school district of 10 buildings and under the direction of the Director of Food Services.

· Ensure client and customer service satisfaction is attained by providing culinary resources and support to all buildings while interacting with building staff twice a month.

· Assist the Director & Assistant Director of Food Services in coordinating the development of new menus and recipes, ordering related supplies and creating special themed days for buildings.

· Initiate and set up of a dedicated program designed specific to Holt Public Schools including implementation of Farm to School Program using Michigan produce.

· Assist with food cost control, menu planning and purchasing.

· Implement and ensure that established food quality guidelines are followed and maintained at all locations.

· Assist with utilization of USDA Commodity Food Items.

· Prepare and serve food in accordance with kitchen procedures in a quick and pleasant manner as needed.

· Serve on the production line, the serving line or as the cashier as directed.

· Assist in setting up and the display of the serving line for food service.

· Assist in cleaning and storing equipment and food supplies as directed.

· Assist in the daily cleanup of the kitchen and service areas.

  • Wash pots, pans, trays, utensils and other kitchen equipment as needed.
  • Perform major cleaning of refrigerators, display coolers, freezers and storerooms at regularly scheduled intervals as designated.
  • Maintain health, safety and sanitation standards for staff, students and equipment at all times.
  • Ensure that meals are ready to serve at the time(s) set by the Building Administrator.
  • Coordinate and maintain accurate production records including compiling food projections for meal planning.
  • Requisition food supplies and equipment based on estimates of future needs.
  • Teach staff how to properly receive and store food supplies and equipment, as well as maintain standards set forth by leadership.
  • Promote student and staff satisfaction by merchandising and serving meals in an attractive manner, teaching staff how to maintain the expectations and promote nutrition education and other school food service activities.
  • Perform other related duties as assigned by the Director of Food Services including but not limited to working on Late Start Wednesday where needed to fill in for absent staff.
  • Maintain a professional and courteous manner with fellow employees, building staff and students.

· Assist with the planning and execution of all catering events.

  • Demonstrate regular, reliable and punctual attendance.

ADDITIONAL INFORMATION:

  • Higher starting wage will be considered for a candidate with years of prior experience.
  • If selected for an interview:

o First round interviews will be conducted via Zoom or Teams.

  • If selected, second round interviews will be conducted on site and will involve a menu tasting.
  • Must be able to pass background checks as required by State of Michigan Law.
  • Three viable reference checks must be provided.
