BANQUET CHEF PROFILE: FRENCH CREEK GOLF CLUB, ELVERSON, PA.

THE BANQUET CHEF OPPORTUNITY AT FRENCH CREEK GOLF CLUB

The banquet chef position at French Creek Golf Club (FCGC) is an amazing opportunity for a talented culinarian who is a positive leader, mentor and team player who has strong organizational, a la carte, wedding, and event experience.

FRENCH CREEK GOLF CLUB

Established in 2004, French Creek Golf Club is a private, original Gil Hanse design located in a suburb of Philadelphia, Pa. The property is approximately 230 acres and consists of a 23,000 square foot clubhouse, a restored, 3000 sq. ft. barn from 1820 and an additional storage barn and a separate golf maintenance facility. The golf course has 18 holes and 2 expansive practice areas.

FRENCH CREEK GOLF CLUB BY THE NUMBERS:

· 2004 is the year the club was established

· 600 members

· Over $3 million in F & B revenue

· 35% a la carte and 65% wedding and event volume

· 100 covers in season (May-Oct), 50 covers out of season (Nov-April)

· 50-60 weddings, 12-15 outside golf tournaments, and numerous other banquet type events per year.

· 12 kitchen employees

· $800-1200 annual member F & B minimum

FOOD AND BEVERAGE OPERATIONS:

A la carte dining is available in the Grill Room, the Terrace Room, and back patio (in season). Events and Weddings are held in the 3000 sq. ft. ballroom, the outside barn courtyard, the terrace room, and the 3000 sq. ft. indoor/outdoor barn. In season, lunch is 6 days per week (Tuesday-Sunday) and dinner is 5 days per week (Wednesday-Sunday). Out of season, lunch and dinner is 3 days per week (Thursday-Saturday). In addition to member a la carte dining, there are many member events throughout the year which include: Easter and Mother’s Day Grand Brunch Buffet, 4th of July BBQ, Breakfast with Santa, lavish Member Guest tournaments, celebrity wine dinners, Boxing Day Prime Rib night, informal but upgraded New Year’s Eve dinner and other member centric golf and dining events.

BANQUET CHEF JOB DESSCRIPTION

The banquet chef (BC) is responsible for all food and back of the house (BOH)operations including planning, instructing, coordinating and quality for all event services. The BC works closely and fosters a strong working relationship with the executive chef and front of the house (FOH) service staff to ensure the delivery of quality and innovative services, products, and offerings to members and guests. The BC also maintains a close working relationship with event and banquet service managers and FOH event staff. The BC reports to the Executive Chef.

The BC helps create and enforce the standards for kitchen policies and procedures, communicates these policies and ensures that these policies are adhered to.

The BC is responsible for ensuring that all food is consistently outstanding-from hamburgers and wings to special five course culinary events throughout all dining and banquet venues. The BC understands that quality and consistency in producing and delivering popular club menu items is just as important to the member experience as producing complex wine dinners and memorable special events; and is responsible to ensure that his or her team approach each activity with identical focus.

The BC assists the BOH initiative relative to accident prevention, training and retention of staff and sanitation and safety standards. The BC pays sharp attention to detail, enforces the highest standards of sanitation and safety and ensures that all BOH staff approach the standards with the same level of focus.

The BC also continually develops his or her culinary expertise and stays current on food and dining trends and techniques and incorporates them as appropriate. He or she will be responsive to organic, gluten free, food allergies and other requests. Quality, consistency, flavor and presentation are the cornerstone of the FCGC culinary program.

The BC maintains and controls inventories of responsible areas and manages and executes yields and waste, etc., to maximize utilization of all product.

The BC works as a strategic and operational partner with other managers and staff to develop information sharing, good communication, superior internal and external customer relationships and high-performance teamwork in order to achieve club objectives.

Ultimately, the banquet chef of French Creek Golf Club is an important and positive face of the culinary operations. He or she is an integral part of the overall success of the operation and is a strong influencer on each constituency he or she interfaces with while performing his or her duties. The responsibility to this facet of the organization from a passionate, creative, supportive, progressive and team focused perspective is of critical importance for long-term success.

QUALIFICATIONS:

To perform this job successfully, an individual must be able to meet or exceed each essential duty. The requirements listed are representative of the knowledge, skill, and/or ability required. Minimum two years related experience in similar culinary environment. Prior private golf or country club experience is preferred but not required.

French Creek Golf Club offers a competitive compensation package including base salary, holiday and performance bonus, health, dental, vision, life, disability insurance, paid vacations, and golf privileges.
