GET TO KNOW THE HOTEL AT THE UNIVERSITY OF MARYLAND:The Hotel at the University of Maryland (The Hotel) is a AAA 4-Diamond independent property located directly across the street from the main campus of the University of Maryland. The Hotel is a market leader in service and guest experience and the team is focused on delivering highly personalized service. The Hotel has 297 rooms with 24 suites and over 45,000 sq. ft. of event space handling events from 10 to 1,500. WHAT WE ARE LOOKING FOR: Successful candidate is responsible for assisting with ensuring first quality Beverage service while maintaining adherence to budgeted payroll and overhead costs. They are also responsible for continually working toward improving Beverage sales revenues beyond budget. WHAT WE EXPECT FROM YOU: * Assist with all aspects of managed Beverage operations * Accountable for maintaining exceptional standards of service, quality and consistency across all venues and service locations in the hotel * Assist with all Banquet operations, The Executive lounge, The Lobby Bar and special event beverage needs * Directly oversee all Lobby Bar operations * Ensure quality inventory management and ordering procedures are implemented and maintained in the Lobby Bar * Work with Executive Chef to review existing menus and develop new menus that meet or exceed guest expectations and adhere to food cost targets * Communicate with Executive Chef, and Banquet Manager to obtain/provide current information regarding daily activities/functions and upcoming events * Analyze current business and industry trends, develop strategic plans, long term budgets and capital improvement plans for all beverage operations * Evaluate changes in guest needs, the hotels guest mix and industry competitive set, to recommend appropriate product/service and operational changes necessary to ensure guest and team member satisfaction * Ensure Lobby Bar adheres to safety, sanitation, food preparation, food storage and alcoholic beverage control policies * Maintain complete knowledge and strictly abide by Federal and State liquor regulations * Inspect all aspects of supervised area ensuring compliance with standards of cleanliness and order and direct respective personnel to rectify deficiencies immediately * Inspect quality and amounts of garnishes, ensuring agreement to departmental standards * Resolve guest complaints, ensuring guest satisfaction * Ensure that transfer slips and spill sheets are filled out and distributed in accordance with departmental standards * Ensure that each liquor bottle ordered is backed up by an exchange of an empty bottle of same liquor * Monitor Happy Hour set-up and service, ensuring agreement to Hotel standards * Responsibility for the creation of cocktail menus and update menu changes on the Point of sale (POS) terminal * Establish par levels for supplies, liquor, beer, wine and equipment. Complete requisitions to replenish shortages or additional items needed for the anticipated business * Responsibility for all beverage purchases, inventories and stock levels within the operation * Regularly check storage areas for proper supplies, organization and cleanliness * Review sales and beverage costs for previous day; resolve discrepancies with Accounting. Track actual against budget * Conduct pre-shift meeting with staff and review all information pertinent to the day's business * Inspect, plan and ensure that all materials and equipment are in complete readiness for service * Prepare weekly work schedules in accordance with staffing guidelines and labor forecasts. Adjust schedules throughout the week to meet the business demands * Understand and perform all job duties and responsibilities of the Bartender/Barback/Cocktail Server/Lounge Attendant when necessary, to include on-call coverage * Demonstrate a perfect knowledge of all beverages served in the bar, how beverages are prepared (to recipe) and presented, and how Bar personnel are trained to possess this knowledge and the application of it * Complete Daily Sales worksheet at each close of pay period * Appropriately prepare for and oversee Lobby Bar events * Must be able to meet all Job Duties required of a Banquet Server * Supervise all Banquet team members professionally and effectively * Effectively create department schedules to ensure efficient service * Supervises and assists with the setup of function rooms to include placement of linen, silver, china and glassware according to event order specifications * Visually inspects function rooms and equipment prior to functions for cleanliness and setup * Verbally communicates in a calm, positive manner during the course of the event with the Culinary, Catering Sales Team, and host and banquet staff to ensure timely execution of events * Prepare banquet re-caps with accuracy for the night auditor to post * Prepare the monthly re-cap for accountings month end * Stay abreast of industry trends * Contribute to team/company engagement efforts * Proficient with MS office * Perform other duties as assigned by Manager and/or Supervisor JOB KNOWLEDGE & SKILLS: * Excellent written and verbal communication skills * Compute basic arithmetic and mathematical calculations * Organized and detail oriented * Excellent time management skills * Excellent interpersonal skills * Sound leadership and managerial skills * Ability to work effectively in stressful, high-pressure situations while maintaining composure and guest satisfaction * Technical knowledgeable and competency in necessary systems and software: * [Outlook, Word, Excel, Visual One, PosiTouch, etc.
