MRBL is a high-volume, fine dining steakhouse known for exceptional quality, precision, and hospitality. We are looking for a skilled Broiler Cook who takes pride in executing at a high level and thrives in a fast-paced, team-driven kitchen.
Position Summary:
The Broiler Cook is responsible for preparing and executing all broiled items—primarily steaks and proteins—with consistency, precision, and attention to detail. This role requires strong culinary fundamentals, organization, and the ability to perform under pressure in a high-expectation environment.
Key Responsibilities:
- Execute all broiled items to proper temperatures and presentation standards
- Set up and maintain a clean, organized station with proper mise en place
- Review daily prep lists, pars, and service needs with the Chef team
- Communicate effectively with Sous Chef and team regarding product levels and needs
- Assist in directing prep and supporting line cooks during service
- Maintain a strong understanding of all menu items, ingredients, and preparation methods
- Ensure all food is handled, stored, and rotated properly (FIFO)
- Follow all food safety and sanitation standards
Opening & Closing Duties:
- Properly set up station with all necessary tools, equipment, and product
- Inspect equipment for cleanliness and functionality
- Complete prep work for service and ensure readiness for volume
- Break down station at end of shift, including:
- Proper storage, labeling, and dating of all products
- Cleaning and sanitizing all work areas, equipment, and storage spaces
- Restocking for the next shift
Qualifications:
- Previous experience as a broiler, grill, or line cook in a high-volume or fine dining kitchen preferred
- Strong knife skills and ability to execute precise cuts
- Ability to read and follow recipes with accuracy
- Knowledge of proper steak temperatures and cooking techniques
- Strong attention to detail and plate presentation
- Ability to work efficiently in a fast-paced environment
- Team-oriented mindset with a strong work ethic
- Availability to work evenings, weekends, and holidays
