JOB SUMMARY

The Cook reports to the Program Director and is responsible for cooking quality food for the facility in compliance with all contractual, Federal, State, and local health department guidelines.

ESSENTIAL JOB RESPONSIBILITIES

  1. Prepares and cooks various items based on approved menus, special dietary, nutritional or cultural requirements, or numbers of portions for meals served to all Program residents in accordance with facility contracts.
  2. Develop meal plans and menus that meet all nutritional standards; submits menus for pre-approval before use.
  3. Conduct daily safety and sanitation inspection of food service areas and food storage areas.
  4. Responsible for cleaning and maintaining the kitchen and eating areas (counters, shelves, cabinets, walls, floors, drains, vents/ducts, ceiling, appliances, etc.) in accordance with all State and local health department sanitation requirements.
  5. Maintain inventory of supplies and equipment based on a schedule; ensures all food items, supplies, equipment are accounted for and properly stored.
  6. Replenish supplies and purchase food on a weekly basis according to menu, budget and inventory.
  7. Be responsible for receiving, labeling, and placement of food and commodities on shelves is done in accordance with all State and local health department food handling requirements.
  8. Taste test all food prior to serving it to the residents and reserve a sampling of each meal for twenty-four (24) hours to determine possible food contamination.
  9. May work with and be a resource for residents assisting with food preparation.
  10. Follow all safety procedures for knives and utensils.
  11. Will drive on agency business.
  12. Think and act quickly and efficiently in emergencies.
  13. Physical presence at the program is required.

ESSENTIAL JOB REQUIREMENTS

  1. High school diploma or GED, and one (1) year experience in preparing well-balanced meals in a residential or commercial setting for groups of at least 40 people and/or culinary education.
  2. Must have Food Handlers certification.
  3. Current certified training in emergency first aid procedures and CPR preferred.
  4. Ability to interpret and implement approved menus.
  5. Ability to plan and prepare well-balanced meals.
  6. Ability to follow the menu and prepare the daily food listed.
  7. Ability to pass a FBOP Federal Bureau of Prisons criminal background check.
  8. Ability to use the equipment necessary to complete the responsibilities of the job.
  9. Basic computer skills in Microsoft Word, Excel, Outlook and PowerPoint, Office 365, Teams, Zoom and other communication/meeting platforms.
  10. Possess a valid driver's license and have access to a dependable means of transportation that is properly insured and operated in accordance with all laws. Agency insurer authorization is required.
  11. Ability to pass a criminal background check.
  12. Ability to pass a pre-employment drug screen and TB test.
