Thunder Valley Casino Resort is Hiring an Assistant Pastry Chef Near Lincoln, CA

Overview:

The Assistant Pastry Chef helps to oversee and is involved in the preparation of desserts, pastries, and baked goods for distribution and sale across all Thunder Valley Casino Resort food outlets. The Assistant Pastry Chef ensures smooth and efficient operations in the Bakery with the ability to produce superior pastry offerings that meet the propertys production demands and quality standards. Responsibilities must be performed in accordance with all Company standards, policies, and procedures.

Essential Functions:
  • Practice, support, and promote Thunder Valley Casino Resorts ELITE company-wide service mission and demonstrate AAA Four Diamond service standards at all times.
  • Assist in the management of pastry and baking production for Thunder Valley Casino Resort including daily items for food outlets, special events, and other requests.
  • Supervise all Bakery Team Members in the preparation and presentation of all Bakery products. Ensure that Bakery production meets quality and quantity standards established by Food & Beverage management.
  • Lead by example with being visible and available to both external and internal Guests.
  • Work hands-on directly with Bakery Team Members to meet daily production demands.
  • Perform baking duties as needed including, but not limited to, mixing, baking, and decorating cakes, custom cookies, desserts, and retail pastries.
  • Create wedding cakes using multiple techniques and products including, but not limited to rolled fondant, various types of icing such as cream cheese, butter cream, whipped cream, and sugary icings, and being able to work with chocolate.
  • Create seasonal desserts that meet AAA Four Diamond quality standards.
  • Support the Pastry Chef to ensure production demands are met. Monitor par levels, product in sheets, and inventories.
  • Follow standard operating procedures (SOPs), recipe books, and guidelines and have all necessary supplies to provide consistent quality of production that meets property-wide service standards.
  • Properly rotate products in freezers, store rooms, cold boxes, and storage cage. Load and unload pallets of bakery items and products.
  • Provide feedback and suggestions for menu revisions and daily operations.
  • Ensure that the Bakery and equipment are in good working order and the work area is clean and hazard-free. Communicate with the Engineering department for maintenance requests as needed.
  • Maintain safety, sanitation, kitchen hygiene, and food service technique standards.
  • Assist in the performance of administrative functions including, but not limited to, communicating with vendors and internal departments, filing, data entry, payroll, scheduling, and shift bids.
  • Record documentation of attendance, discipline, incidents, and schedules, meeting notes, reports and any other related material using the appropriate forms provided.
  • Assist in the hiring, training, evaluating, and coaching Bakery Team Members.
  • Assist with the oversight of progressive discipline administered to Bakery Team Members to ensure compliance with collective bargaining agreement.
  • Communicate with the Bakery management team on a consistent basis, providing updates on all department activities.
Minimum Qualifications:
  • Three (3) years experience in high volume gourmet, retail, or casino/resort bakery.
  • Management experience working with Team Members under a collective bargaining agreement is preferred.
  • High School diploma or equivalent required.
  • Ability to work hands-on in any kitchen environment, including those involving a three-meal period and high volume production.
  • Ability to communicate effectively with Guests, Team Members, and Management in both written and verbal form.
  • Must have or be able to obtain a ServSafe Manager Certificate.
  • Ability to communicate effectively with Guests, Team Members, and Management in both written and verbal form.
  • Ability to work a flexible schedule including weekends, nights, and holidays.
  • Must be at least 21 years of age.
  • Must be able to obtain UAIC Tribal Gaming License.

Physical Requirements:

  • Requires normal, corrective vision range, the ability to see color and the ability to distinguish letters, numbers and symbols.
  • Must be able to lift 50 lbs. with or without assistance.
  • Must be able to maneuver a pushcart up to 250 lbs.
  • Must be able to enter walk-in units with temperatures to -10 degrees.
  • Must be able to bend and reach to a height of 6 feet with or without assistance.
  • Must be able to walk and stand for extended periods of time in a hot or cold kitchen environment.
  • Manual dexterity to operate job related equipment.
