Strategic Intent
Overseeoverall day-to-day operations within the All day and Fine Dining Restaurantsand In Room Dining. Maintain an efficient operation of the Restaurantsand In Room Dining departments and meet guests’ expectations for quality of theproduct and service. Assist the Restaurant General Manager as requested forlong-term planning within each business unit.
Organizational Structure
TheManager, Food & Beverage will report to the Director of Food & Beverage.S/he will supervise the daily activities of the restaurant wait staff and roomservice servers.
General Duties and Responsibilities
Assist the Restaurant General Manager withthe departmental opening of the All Day and Fine Dining Restaurants and the InRoom Dining Department; assist with the writing of departmental SOP’s under theguidance and direction of the Restaurant General Manager.
Provide leadership and support for linestaff throughout the restaurant and In Room Dining operations.
Attend pre-conference meetings as needed.
Assist daily departmental meetings and leadline-ups as needed.
Communicate all group information/changesto existing information to appropriate hotel associates in an accurate andtimely manner.
Maintain an active trace system for guesthistory on their F&B preferences.
Audit checks when necessary; assist withcorrections in MICROS; run shift reports and assist associates with close outwhen necessary.
Assist with the training and onboarding ofall new associates.
Maintain an active presence on the diningroom floor, assisting guests and addressing concerns, resolving issues andproviding all guests with a distinctly Watergate dining experience.
As directed the following additional dutiesmay include but are not limited to:
Assist with the monthly and weekly forecast
Monitor payroll of department
Attend daily communications meeting
Attend weekly department head meeting
Attend scheduled food and beverage meetings
Develop and update menus, as appropriate
Revise standard and procedures fordepartment, as necessary
Experience and Requirements
Must possess at least 3 year experience asa supervisor/manager in a luxury hotel food and beverage operation ORupscale/fine dining establishment.
Must be willing to work a flexible schedulethat will include early mornings, late nights, weekends and holidays.
Must be proficient with MS Office, Excel,PowerPoint, Word, MICROS, Opera.
Must have be a superior organizationalskills and strong multi-tasking abilities.
Must have strong communication skills withfluency in English required. Those with bi-lingual abilities will be preferred.
Bachelor’s Degree in Hospitality or relatedfield is preferred.
Must be able to meet the physical demandsof the position such as walking/standing for extended periods of time while onshift; lift/carry/pull/push 25 lbs. /-.
