About Fort Logan:

The Colorado Mental Health Hospital in Fort Logan (CMHHIFL) is one of two state hospitals serving our community. The vision of CMHHIFL is to provide the highest quality mental health services to persons with complex, serious, and persistent mental illness within the resources available. Our mission is to support those individuals in achieving their recovery goals and reaching their full potential. CMHHIFL provides inpatient treatment to adult patients, generally between the ages of 18-59. The hospital currently has 138 adult inpatient beds and over six treatment milieus serving civil and forensic individuals. Medical services, occupational therapy, neuropsychological-rehabilitation services, and trauma-informed care services are available for all patients throughout the hospital.

Description of Job

About this Work Unit:
The Nutrition Services Department provides quality meals and medical nutrition therapy to patients in a mental health facility. Meals meet the nutritional, medical, spiritual, cultural, and mental health needs of the patient population and are prepared in a manner that meets established standards.

Purpose of this position:
This position serves as a unit and production supervisor and directly supervises dining services staff and is accountable for actions and decisions impacting the pay, status, and tenure of these staff. This position ensures safe, compliant, and effective completion of food service production within the Nutrition Services Department kitchen, including meal preparation, cooking, portioning, sanitation, documentation, and supervision.
All work performed by this position adheres to federal, state, and local regulations, Colorado Mental Health Hospital in Fort Logan (CMHHIFL) policies and procedures, and proper safety and sanitation guidelines.

Primary Job Duties
:
Production Cooking:
This position works alongside Dining Services III and IV employees during meal preparation, production, and meal service ensuring standardized recipes, written instructions, portion sizes, production sheets, prep lists, food safety guidelines, etc. are being followed. This position ensures high-quality food is prepared and food is attractive, appetizing, and at the proper temperature and provides necessary instruction and training to employees as necessary. They comply with applicable laws, regulations, policies, and standards including the Joint Commission, Colorado Department of Health, and the standards and regulations set by the hospital and nutrition services. This position provides cooking coverage when necessary.
  • Determines when recipes need to be adjusted based on an increase/decrease in census, obtains adjusted recipes in CBORD food service software, and provides recipes to dining service staff
  • Determines when a recipe needs to be modified to improve quality while maintaining adequate nutrition
  • Determines necessary menu substitutions when product is short or substandard
  • Determines when/if adjustments are necessary after tasting and visually inspecting the product for quantity and quality before service
  • Determines necessary course of action to ensure quality meal service.
Supervision:
This position is a production and unit supervisor. They have direct and formal control over dining service III and IV staff by assigning tasks, monitoring progress and workflow, checking the product, scheduling work, and establishing work standards. This position is responsible for providing appropriate supervision, mentoring, professional growth, and development to assigned staff. They facilitate and encourage food service staff to make individual commitments toward accomplishing the department’s mission through implementing and enforcing CDHS, CMHHIFL, and department policies and procedures, complying with applicable laws, regulations, and standards, directing training programs and employee appreciation/recognition programs, adapting the department to change if necessary, developing work schedules to ensure a high degree of efficiency, assigning duties, etc. This position has signature authority for actions and decisions that directly impact pay, status, and tenure. They manage personnel by evaluating employee performance, conducting plans, appraisals, and evaluations, organizing and resolving conflict, addressing performance concerns by completing Confirming Memos and/or Performance Improvement plans, maintaining appropriate documentation, interviewing and hiring new employees, and providing orientation and training for employees. They ensure staff competence by providing and facilitating training appropriate to needs. They manage assigned teams in the development, design, review, and implementation of project quality/improvement plans or strategies to support the departmental goals and objectives. They manage by providing positive and constructive feedback to employees to reward, correct, motivate, and drive a high level of employee engagement. They implement consistent 1:1 meetings with subordinate staff and also provide coverage for production areas as needed due to staff shortages, call-offs, etc.
  • Determines Performance Management Plan ratings for subordinate staff
  • Determines appropriate performance actions to address subordinate's performance issues (need for retraining, referral to CSEAP, Confirming Memo, Performance Improvement Plan, etc.)
  • Determines which personnel issues need to be referred to the appointing authority for further action and provides all supporting documentation
  • Determines approval or denial of sick and annual leave requests
  • Determines how to individualize supervision to result in employee growth
  • Determines necessary training needed to ensure staff competence
  • Determines benchmarks to document appropriate, achievable performance expectations
Food Safety/Sanitation and Document/Regulatory Compliance :
This position is responsible for proper documentation of temperatures (food items, refrigerators, and freezers), production records, cleaning schedule, food safety and sanitation, proper food storage labeling and dating, and any other necessary documentation. They ensure that all written documentation and reports from each shift are completed daily. They ensure compliance with utensils/plate/bowl counts, key monitoring, knife inventory, food auditing, operation, minor servicing of equipment, Hazard Analysis and Critical Control Point (HACCP), etc. They work with the food service managers to enforce applicable laws, regulations, policies/procedures, and standards including the Joint Commission, Colorado Department of Health, and the standards set by the hospital and nutrition services.
  • Determines corrective action to be taken if food is not at an appropriate temperature.
  • Develop a quality assurance plan to regularly check adherence to proper labeling and dating of food and ensure F.I.F.O. practices are followed throughout the kitchen.
  • Ensures all food service equipment is kept in working order and the kitchen is kept clean and sanitized.
  • Determines appropriate steps to take when equipment malfunctions and/or the kitchen isn’t cleaned and sanitized.

  • Knowledge of techniques used in mixing food (e.g., gelatin, pancake batter, salad dressing, scrambled eggs, etc.).
  • Knowledge of meat and vegetable preparation methods.
  • Knowledge of cooking methods (e.g., frying, deep-fat frying, boiling, or baking).
  • Knowledge of the use of kitchen utensils in serving or portioning meals.
  • Knowledge of food safety related to handling and storing cooked foods, serving and storing temperatures, or reading food thermometers.
  • Ability to read English at the level necessary for interpreting and understanding written recipes, menus, nourishment labels, diet slips, portioning sheets, and policies and procedures.
  • Ability to perform basic mathematics (addition, subtraction, multiplication, and division) as related to calculating or converting units of measure for determining proper amounts of food ingredients for mass food production.
  • Ability to clean, cut, cube, grind, and tenderize meat.
  • Ability to clean, peel, dice, grate, slice, and chop vegetables.
  • Ability to measure food ingredients using food scales, measuring cups, or spoons.
  • Ability to mix food items (e.g., gelatin, pancake batter, salad dressing, scrambled eggs, etc.).
  • Ability to boil food items and operate a jacketed steam kettle in a safe and effective manner.
  • Ability to fry food items and operate a grill or tilt grill in a safe and effective manner.
  • Ability to bake food items and operate a gas, rotary, or convection oven in a safe and effective manner.
  • Ability to understand and execute oral and written instructions,
