Core ResponsibilitiesThe key responsibilities for this position are:
During meal service periods, helps the guests with selection and service of wine and spirits. With dual goals of guest satisfaction and increased beverage sales.
Maintain complete knowledge of:
All Wine, beers and spirits selections available in Restaurant, Bar, Pool Bar and Private Dining.
Designated glassware and garnishes for drinks.
All menu items, preparation method, ingredients, garnishes, presentation.
Daily menu specials, 86'd items.
Restaurant, Bar layout, table/seat/station numbers, proper table set-ups, room capacity, hours of operation, price range and dress code.
P.O.S. and manual system procedures.
Correct maintenance and use of equipment.
All department policies/service procedures.
Employee Handbook.
Maintain complete knowledge and strictly abide by state liquor regulations, particularly those prohibiting service to minors, intoxicated persons and drunk driving.
Anticipate guests’ needs, respond promptly and acknowledge all guests, however busy and whatever time of day. Promote positive guest relations at all times.
Assist in overseeing the maintenance of wine storage areas, quality of coffee beverages, cleanliness of the barista area.
Responsible for developing and presenting beverage education presentations at the pre-service meetings. One subject per week.
Assist in ensuring that the staff is adhering to all beverage service standards, including wine by the glass pouring standards, helping to keep costs in line.
Assist in daily maintenance and organizing beverage storage areas.
Assist in beverage inventories.
Assist Wine Director in preparing, updating and presenting wine education modules to staff and guests.
Participate in and support hotel and company efforts towards sustainability and environmental initiatives
Perform other duties as directed, developed or assigned.
Required Qualifications
High School graduate
Minimum of 21 years of age to serve alcoholic beverages
Successful completion of Certified Sommelier level in the Court of Master Sommeliers, CSW or WSET Level II
5 years experience as a fine dining server, captain, sommelier, Maitre d’ or equivalent.
Ability to satisfy communication standards in English with guests, management, and co-workers to their understanding.
Knowledge of foreign and domestic wine with emphasis on California, French and Italian wines.
Food handling certificate
Responsible Beverage Server certificate
Must have full availability to include nights, weekends and holidays
Required Skills
Ability to satisfactorily communicate in English with guests, management and co-workers to their understanding in person and by telephone
Ability to provide legible communication.
Ability to compute basic mathematical calculations
Ability to lift and carry 50 lbs with or without reasonable accommodation
Ability to stand and walk for up to 12 hours
Ability to think clearly and remain calm under pressure, making sound and logical decisions quickly
Ability to enforce resort’s standards, policies and procedures with Restaurant/Bar staff.
Ability to prioritize work assignments, delegate work
Ability to direct performance of Restaurant/Bar servers and bartenders follow up with corrections where needed
Ability to motivate Restaurant/Bar service staff and maintain a cohesive team
Ability to ascertain and assist management in staff training needs and provide such training
Ability to be a clear thinker, analyze and resolve problems, exercising good judgment
Ability to focus attention on details
Ability to suggestively sell menu items, beverages and wines
Ability to input and access information into P.O.S. system
Ability to exert physical effort in transporting equipment and wares
Ability to endure abundant physical movements in carrying out job duties
Ability to ensure security and confidentiality of guest and hotel information
Ability to work without direct supervision
Ability to anticipate and understand guests’ service needs
Ability to ascend and descend stairs
Ability to work nights, weekend and holidays
Preferred Qualifications
Artistic talent
Computer training, preferably in Excel, Word, Adobe InDesign, Google Workplace and P.O.S.
College degree, Hotel/Restaurant Management
Previous experience as a Wine Steward, Sommelier or equivalent.
Ability to communicate in Spanish and French.
Certification of previous training in liquor, wine and food service.
Any previous culinary training.
Certification in alcohol awareness program.
Certification in CPR
