Chef Manager

We are seeking highly motivated, friendly, customer-focused candidates who thrive in delivering excellent customer service and who want to become part of a dynamic and collaborative team. The Chef plays a vital role in building our brand and will be an individual who has a passion for the culinary arts and possesses great leadership skills to join our opening team. This important role will have at least 5 years of experience and will be willing to input ideas into our internationally inspired menu, create seasonal and regular specials, possess a fun and personable attitude, be punctual and have reliable transportation.

The Chef’s responsibility is to directly manage all back of house functionality of the business; direct the preparation of food, help the kitchen team in the preparation of food items and set up stations for food service. This is a working Chef position. This position must be able to prepare food quickly to the set specifications and standards while maintaining hygienic practices.

The Chef also arranges, prepares and breaks down the stations of the kitchen, storage areas and refrigerators, makes sure all are maintained at the beginning and end of every day/night. This person will be capable of supervising the team independently as well as in conjunction with the General Manager and ownership team.

Chef Job Responsibilities:

• Inventory and ordering for all food operations

• Schedule, train and discipline all kitchen staff

• Oversee/set up stations and collect all necessary supplies to prepare menu for service

• Prepare a variety of foods; meats, fish, poultry, vegetables, cold food items and more.

• Tracks customer behavior, trends and sales to know what dishes are moving and which are not

• Maintains budget and monitors costs – cost management.

• Follows standard operating procedures for proper preparation, storage and food service

• Has the ability to think on your feet and be agile

• Collaborate with General Manager to set menu prices

• Use food preparation tools in accordance with manufacturer instructions

• Close the kitchen correctly and follow the closing checklist for kitchen stations

• Maintain a prepared and sanitary work area at all times, keeping the work area clean all through the shift

• Oversee all ware-washing procedures along with GM to maintain standards for safety

• Assist with all duties as assigned

• Maintains appropriate recipe documentation and preparation procedures

• Works with General Manager and Bar Lead to create pairings and special event menus as needed

• Appropriately delegates tasks to staff.

• Fosters a strong relationship between kitchen staff and serving staff

• Directs kitchen staff in meal preparation, creation, plating and delivery.

• Preparing meals and completing prep support as needed

• Hires, trains, reviews and, when necessary, disciplines staff along with GM.

• Maintains and nurtures vendor relationships

• Uses point-of-sale tracking technology and restaurant management platforms.

• Acts as ambassador for the restaurant and is a positive force in the workplace.

• Develops relationships with customers and builds a strong clientele base.

• Ensures all safety procedures are followed meticulously.

• Manages all closing procedures for kitchen operations

• Leads by example

• Demonstrates a thorough understanding and practice of Employee Handbook, Employee Benefits and corporate philosophies.

• Perform varied duties to ensure proper restaurant operation according to standard operating procedures.

Chef Requirements:

• Must be at least 21 years of age or older

• Must speak English fluently and be able to write basic English.

• Knowledge of the restaurant’s cuisine and ability to prepare recipes for service

• Ability to develop new and unique recipes within the restaurants flavor profile

• Current knowledge of trends in the industry

• Knowledge of federal, state and local food handling regulations

• Be comfortable training, directing and supervising kitchen staff

• Good organizational skills and verbal communications skills.

• Ability to use logical or rational thinking to solve problems.

• Ability to perform job functions with attention to details, speed and accuracy.

• Ability to provide details written and verbal instructions independently.

• Ability to perform basic mathematical calculations, including calculations involving fractions, decimals and percentages.

• Ability to stand for at least 8 hours.

• Ability to perform moderate physical work and may be required to lift up to as much as 50 pounds.

• Ability to perform activities such as bending, stooping, kneeling, crouching, climbing, reaching, standing, walking, pushing, pulling, lifting and grasping for up to five hours without sitting.

• Must have reliable transportation

Education, Experience & Licensing Requirements:

• High school diploma, Associates Degree or higher in hotel and restaurant management a plus

• Prior experience working in a bar or restaurant

Supervisory/management experience

• Familiarity with point-of-sales technology and bar/restaurant management platforms.

• Food Handler/Food Manager Certification – State of Michigan
